When You See A Cardinal

 

It’s finally Spring and I can hear the birds chirping outside of my windows every day. One of my favorite birds to see are Cardinals. Did you know that cardinals represent a lot of different things to people?  

 

A few of the most popular meanings when you see a cardinal are new beginnings, confidence, strength, good fortune, happiness, romance, determination and one of my favorite meanings of an angel being near. 

 

When a red cardinal crosses your path it could be trying to tell you many different things. Maybe a romantic relationship in the future? A new chapter in your life is about to start? They often say that cardinals are sent to those in need during difficult times.

 

Now when you see two red cardinals together you should embrace their message. It's supposed to mean love, renewal, guidance and positive energy. Who doesn’t need an extra dose of positive energy every now and again?

 

Cardinals  have often been viewed as a sign of hope as well as a reminder that you can do hard things because hard things don’t last forever. 

 

People also believe seeing a cardinal is a “sign” that the loved ones who have passed away in our lives are with us in spirit. Every time I see a red cardinal I always say hello, as I feel that it is one of my angels visiting me from above. This morning during the rain storm we are having currently I was lucky enough to see 3 red cardinals playing in puddles in my backyard. They looked like they were enjoying the rain falling on their wings as they spread them out and let the droplets clean their wings.

 

As you can see, there are so many positive meanings  and there are a lot more for when a red cardinal crosses your path.  For me, I will always embrace their beauty, say hello and watch them until they decide to fly off for someone else to embrace them. 

 

 

Being that it is Spring and everyone is ready for Spring get togethers, one of my families all time favorite recipe that I HAVE to bring to family get togethers is an Eclair Cake. It’s super simple to make and taste so good! Trust me, take this receipt and you’ll never be asked to bring anything else other than that eclair cake to every event from that point on, lol. 

 

Ingredients:

3 cups of milk (I generally do 2.5 cups to make the filling thicker)

1 (8oz) container of cool whip thawed

2 (3.5oz) packages of instant vanilla pudding

1 (16oz) box of graham crackers

1 (16oz) package prepared chocolate frosting

 

Directions:

 

  1. Gather all the ingredients
  2. Put both packages of instant vanilla pudding in a large bowl (as you will have to add the cool whip in later.) Pour in the milk and stir together until well combined & pudding starts to thicken up.
  3. Once you are done with the mixing the vanilla instant pudding, stir in the cool whip until well combined and set to the side.
  4. In a 9x13 pan take the graham crackers and arrange a single layer of graham cracker squares and cover the bottom of the pan. 
  5. Evenly spread half of the pudding mixture over the crackers; then top with another layer of graham crackers and then pour the remaining pudding mixture on top. Next you will top with a final layer of graham crackers. 
  6. This is where I do things a little differently, I take the packaged prepared chocolate frosting and remove the lid and seal and put in the microwave for 20-30 seconds and check to see if the mixture is liquid like (to make it easy for pouring). If it isn’t melted enough to pour put back in the microwave for 10 more seconds. 
  7. Once you remove the frosting from the microwave pour over top of the final layer of graham crackers and make sure the chocolate frosting covers everything completely up to the every edges of the pan.
  8. Cover the eclair cake up and let chill in the refrigerator for at least 3.5 hours before serving. 

 

*Note: I always like to prepare the eclair cake the evening before any event and let it chill in the refrigerator overnight as it gives it plenty of time to soften the graham crackers up.

Hello Elaine - while I am not a birder, I enjoy seeing birds in flight or doing whatever seems to be occurring around them.  Nature is a non-stop show of fascination. 

And that is true for other sweet things in life too like desserts.  The recipe you share seems quite tasty.   It must be time to explore that too.

Hi Elaine- when Larry and i see a cardinal while we're out walking, we view it as a positive sign.
