A light and nutritious Summer Salad with Homemade Bread is what I chose for the 2024 June Challenge. For the salad, I started with fresh Frisee. It is a green salad in the chicory family, also known as curly endive made up of curly leaves. I rinsed it in cold water, shook it to dry; then marinated the Frisee in Cilantro Lime Dressing made by Stonewall Kitchen. Or if you can't find the Cilantro Lime Dressing, Olive Oil & Balsamic Dressing, or Balsamic Fig works just as well. I don't add additional Cilantro Lime Dressing to my salad. I find the marinated leaves coats the chopped vegetables and whatever else I add just right. And of course, you can add whatever other fruits and vegetables you like. I also like adding lots of black olives for a Mediterranean summer salad.

 

For this dish that I photographed down below, while the Frisee marinates, I chop up fresh local home grown tomatoes, a quarter or less of a pickling cumcumber, and fresh cut strawberries. After everything is chopped, I toss it into my marinated Frisee and then I cut a slice of homemade Multigrain bread with sunflower seeds and other nutty grains, whichever is available. On one half of the slice of bread, I make cream cheese adding very fine chopped up chives. For dessert, I add a few cherries on the side. You seriously, didn't expect me to type up the entire recipe when you could watch Martha do it!

My beverage of choice for a Summer afternoon lunch, is chilled Saratoga Sparkling water. I made the purple whiskey glass in one of my glassblowing classes a few months ago. You can see a few other glassblowing creations in the background. During the pandemic, I decided to use my China, both formal and everyday China. I use them both and mix them up just because I can! Below is my summer salad with a side of one slice of Multigrain bread, spread with cream cheese and very fine chopped chives, with a side of cherries. 

 

The bread takes the longest to make but I think it's worth it. For the recipe, you'll have to watch Martha Stewart's video as I did to learn how to make this very healthy and delicious recipe! When it comes to plaguerizing and the law, I wouldn't mess around by copying her recipe. Afterall, Martha knows best! Watching Martha in the kitchen is always interesting!

Michael Elliott - As a parent, I made homemade bread for my children, and they participated at the kitchen table. Those were great times! It's really not as scary as it sounds. Also, I never had or used a bread maker. I needed to knead the dough to enrich the quality of my family's life.

Hello Patricia - this looks and sounds like a wonderful taste treat that would be ideal in practically any season in our area.  Nicely photographed and presented.  After all, plating is so important in presentation.  And it looks good enough to eat seems like it might be redundant.  Happy Thursday.

I hope you try the bread recipe. It's very good! Thanks for the compliment on my glassware. Tomorrow I will try my hands at making a beer glass. Oh, and by the way, my whiskey glass is not reserved for whiskey, nor will my beer glass be exclusive for beer!

Carol Williams - I started making homemade bread for my children as a teaching tool for them to learn about words, measurements, etc. They were always willing participants! 

I never tried a Breadmaker. I like to use my hands. Or should I say, I NEED to KNEAD!

Cooking is a great way to teach basic math, and kids always love to help. I did try a breadmaker at one point, but it wasn't the same as real homemade bread.

Patricia Feager, ABR,CRS,GRI,MRP I could never make homemade bread - I would eat the loaf by the end of the day - a small piece here and there. The salad  , however, sounds delish. I love cilantro and just purchased a few bunches at Produce Junction. I use it in soups and salads.

Hannah Williams - now that's FUNNY! It has taken a lot of will power for me to set one slice at a time on my plate and not add more. I find that when I enjoy the taste of everything else, I eat less bread in one day. Freezing bread works well too!
