A light and nutritious Summer Salad with Homemade Bread is what I chose for the 2024 June Challenge. For the salad, I started with fresh Frisee. It is a green salad in the chicory family, also known as curly endive made up of curly leaves. I rinsed it in cold water, shook it to dry; then marinated the Frisee in Cilantro Lime Dressing made by Stonewall Kitchen. Or if you can't find the Cilantro Lime Dressing, Olive Oil & Balsamic Dressing, or Balsamic Fig works just as well. I don't add additional Cilantro Lime Dressing to my salad. I find the marinated leaves coats the chopped vegetables and whatever else I add just right. And of course, you can add whatever other fruits and vegetables you like. I also like adding lots of black olives for a Mediterranean summer salad.
For this dish that I photographed down below, while the Frisee marinates, I chop up fresh local home grown tomatoes, a quarter or less of a pickling cumcumber, and fresh cut strawberries. After everything is chopped, I toss it into my marinated Frisee and then I cut a slice of homemade Multigrain bread with sunflower seeds and other nutty grains, whichever is available. On one half of the slice of bread, I make cream cheese adding very fine chopped up chives. For dessert, I add a few cherries on the side. My beverage of choice for a Summer afternoon lunch, is chilled Saratoga Sparkling water. I made the purple whiskey glass in one of my glassblowing classes a few months ago. You can see a few other glassblowing creations in the background. During the pandemic, I decided to use my China, both formal and everyday China. I use them both and mix them up just because I can! Below is my summer salad with a side of one slice of Multigrain bread, spread with cream cheese and very fine chopped chives, with a side of cherries.
The bread takes the longest to make but I think it's worth it. For the recipe, you'll have to watch Martha Stewart's video as I did to learn how to make this very healthy and delicious recipe! When it comes to plaguerizing and the law, I wouldn't mess around by copying her recipe. Afterall, Martha knows best! Watching Martha in the kitchen is always interesting!
