Fork it Over for Father's Day - Sandwich Cakes

This Sunday, the 16th June is the day we honour all Fathers; whether they still be with us or not.  My Father passed away in 2001 but I still honour him in little ways, every day I hope.  

He loved sandwiches of all types and didn't really have a sweet tooth so we enjoyed having these different varieties of Swedish Sandwich Cakes.  

They can be made in any shape; round, square, rectangle, loaf . . .

They also can include any type of bread and any type of fillings.  So simple!

You can bake your own bread and use your own garden bounty!!

Enjoy celebrating all Fathers this weekend in the manner that suits you best.  The important thing is to remember!

LOL  Not really a secret.  We like to use egg salad for a layer, smoked salmon for another, maybe tuna or chicken salad for another.  Cucumbers are always a nice crunch or gherkens.  Frosted with a whipped cream cheese or whipped feta?   Decorated with veggies and herbs.  It's really whatever you like and have on hand

Susan, What beautiful creations!  I never heard of sandwich cakes before.  Thanks for the introduction!  I lost my dad in 2000.  They are always with us, especially as you do with honoring him as often as you can.  Take care.

They are always close to our hearts.  Sandwich cakes originated in Scandinavia

There are endless variations of this recipe that you can make, changing the ingredients a bit every time and also decorating the cake different every time, but really, sky is the limit!   I hope you enjoy trying it out.

Hi Susan- I can't remember having a sandwich cake but I'm going to have to try one!!!  Is there a kind of bread that you prefer using????  

BTW I channeled you when I assembled my first charceuterie board!   It wasn't fancy but everyone loved it.

I like to use different breads for different layers; pumpernickle with smoked salmon, sour dough with chicken salad, rye with egg salad.  They all work if they're uniformly cut.  That's the beauty; anything goes!! 

I'm sure your charceuterie board was beautiful; aren't they fun to create.  I bet your guests loved it!!!

Oh my, Susan! You are so incredibly talented! These sandwich cakes look picture-perfect - much more gorgeous than even a true chef's photos. I wondered what you used to 'ice' the cake but, I saw it in your reply to someone's comment. I have used the vegetable cream cheese and whipping that may make a wonderful 'icing' for a sandwich cake. I enjoy baking bread and would likely bake a round sourdough (or several different types might be fun) and then layering. OMG, you have given me wonderful ideas for a summer party we have scheduled at the end of July.
