Providing the most bang for the buck in a skillet was my motivation when I created this simple breakfast dish. This one pan breakfast packs a big nutrient punch and is filled with great protein and good nutrients. I don't cook nearly like I used to, but when I do..... one pan is the best.... and the fastest clean up!

FIRST - you'll need a skillet, chopping knife, small cutting board, small bowl, whisk, and a table knife. A small plate with a fork helps, too!
Ingredients:
- One slice of bread, I prefer hefty wheat bread
- Butter (I use the authentic stuff)
- Half an avocado (sliced)
- Egg (whisked)
- Small amount of chopped tomato, onion, bell pepper
- Any kind of cooked breakfast meat (optional)
- 1 C chopped spinach
- Salt & Pepper
- Shredded cheese (your preference)
- Salsa verde
Melt about 2 tablespoons of butter in an average sized skillet. On one side, place the bread and top with sliced avocado to cover. On the other side, saute onion, pepper, tomato briefly, pour egg and stir till cooked slightly, add salt & pepper into the veggie mix and add spinach. Stir and add on top of the avocado with "skillet toast." Spatula that single slice of bread and "stuff" onto a plate and top with salsa and shredded cheese.
This is my weekend favorite as it turns breakfast and lunch into one meal = BRUNCH for one! What ingredients would you substitute?
