Chicken Mayonnaise A La Zack
A family favorite that is very easy to put together and always a hit at every gathering.
When my grandson Zack was little his mom (my daughter, Jaime) would grind cooked chicken in a food processor because Zack did not like "chunks". She added mayonnaise to it so it wouldn't be too dry. Zack called it Chicken Mayonnaise.
One day when I needed something for a family party, and had limited ingredients to work with and very little time to prepare, I remembered Jaime's "chicken spread". I simply adapted it for all ages to enjoy.
It was a hit! Very tasty....visually appealing....fast and easy to make!
Start with leftover baked, boiled or grilled chicken.
Process in a grinder or food processor until very fine.
Add mayo.
You can cut cherry tomatoes in half, scoop them out, and fill with chicken mayonnaise.
You can spread chicken mayonnaise on cucumber slices or celery sticks.
Place it in little pita pockets or finger sandwich rolls.
My favorite way to serve it is on crackers and garnish them with whatever is on hand.
If you are going to travel with this appetizer, I suggest putting the chicken spread in a zip-lock bag.
Once you arrive, arrange crackers on platter, cut a corner off the bag and squeeze chicken onto the crackers.
Bring all your sliced veggies in bags and there are no containers to bring home.
Pretty much any veggie works as garnish.
Grapes are really good too!
