We started getting into 'smoking' meats during the pandemic. A good friend of ours had a smoker and he was kind enough to get us going with smoking. Our first try at it sucked, to say the least. OMG the recipe was horrible and it tasted so bad we had to throw out the ribs and order pizza. That's how bad it was - really bad!
But we didn't give up! If our friend's food could taste so darn good, we knew we could make it happen. The 2nd try was much better, and the 3rd even better. That's when I thought - I'm going to take a stab at it myself (mostly because Gary was busy working on something else and I wanted to surprise him). I added a little of this and a little of that to the recipe and Les Viola - it's the recipe we use to this day! I hope you like it as much as we and all our friends do! Lip smacking, delicious smoked ribs!
Smoked Pork Ribs
Here's what you need for ingredients....
1/4 cup brown sugar
1 teaspoon Kosher salt
2 teaspoon black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground mustard
1/2 teaspoon ground cinnamon
1/2 teaspoon celery salt
1/4 teaspoon cayenne pepper
* 1/2 cup Dijon Mustard ( or a tad more if needed )
Mix all the ingredients in a bowl - except for the Dijon mustard!
Use a fork to make sure the ingredients get smoothed out and there aren't any little clumps of sugar or seasonings.
Layer a light coat of Dijon Mustard all over the ribs. Just enough to give it some moisture and great taste. Then rub the mixed ingredients all over the ribs, top and bottom. Cover with tin foil and keep in refrigerator over night.
Then when it's time the next day, crank up the electric smoker to 225 degrees. Add wood chips (fill up the little pan in smoker). I use hickory or apple chips. Once smoker reaches 225 degrees, pop in the ribs and cook for 3 hours. Then, pull the ribs out, wrap in foil, cook for another hour and les voila - your ribs are ready to enjoy!
I like to serve the ribs with a variety of sides, such as coleslaw, oven baked potatoes, fresh corn on the cob, baked beans etc. Your choice - whatever sounds good to you. The STAR of the show will be the ribs. And get used to hearing - OMG these are the best ribs I've ever had. Seriously! I hear it all the time from friends
