Here it is folks!!  In response to the Active Rain June 2024 Recipe Contest!  Here is my entry!   my world famous BUBBA BEANS!

You wanted a recipe and if you are having a get together on the patio...this is the one they will rave about!

This recipe was invented and perfected by Mike McCann in the late 1970's and has been made dozens upon dozens of times since!

Mike McCann’s  WORLD FAMOUS  BUBBA BEANS

NOTE: This is NOT Low Calorie. But dang...is it good!

Large Crock Pot is best to use cook on low or medium. Or two crock pots and split in half.

As everything cooks…it will lose some of the volume so the crockpot can be heaping if needed.

3# bacon, chopped and then fried and drained maybe need a bit more if bacon is fatty.

2# Ring Sausage sliced and halved or quartered and fried   Optional  (I like Kielbasa ) slice thin into 2 or 4 pieces.

NOTE:    Rinse all beans completely DO NOT Save the Bean Juice regardless of type of bean juice. Very Important.

2 - 28 oz cans of Bush’s Baked beans  drained and rinsed all beans

1 - 16 oz kidney beans  (if not using kidney…add a 2nd navy bean)

1 - 16 oz  navy beans

2 -  16 oz  white beans

1 -  cup ketchup possibly more

3 -  cups brown sugar

3 - bell peppers diced   I like to use green, yellow, and red

2  - medium size sweet onions diced or chopped

1/2 cup to 1 cup  red or white wine sweet vinegar (this acts as the substitute for the drained juices)

1/2 cup mustard or 8 tablespoon dry mustard

Spice blend – about 6 tablespoons to taste IE:   Pepper-Salt- celery salt- more pepper- other spices…etc

1. Plug in Crockpot on high….

2. Fry bacon…I cut the bacon into about 8 or more pieces per slice before frying. Drain grease. If pieces are too big after frying…crumble a little but not too small.

3. Option: If using these…also cook the kielbasa or sausage and drain if needed. 

4. While bacon is frying, open all cans of beans and rinse and drain all juices.

5.  Stir bacon or sausage

6. Dice the onions and peppers - DO NOT PRE-COOK

7.  Now you can combine…

8.  Add a can of each type of bean into crockpot

9.  Add half of ketchup, brown sugar, vinegar, mustard

10. Add half the bacon and if using…kielbasa or sausage

11.  Stir that up

12. Repeat with equal portions until crockpot is heaping full

13.  Stir all multiple times.

14.  IMPORTANT: Cook on high until moisture is forming on inside lid then turn down to medium or low

15.  Stir and taste…may need to add spice blend and/or moisture

16.  Cook for a couple hours…do not let run out of liquid…if needed add water half cup at a time.

Turn down to low and Enjoy the flavors and textures!!

I will be making these again in a few weeks for a family reunion...will make a double batch!!

NOTE: My original recipe includes Vodka instead of Sweet Vinegar  If you put vodka in early and it cooks with the full crockpot…it will cook the alcohol out…do not add at the end if needing moisture due to kids and non-drinkers. m

Hi All, Thank you for stopping by.  No...bacon does not stay crunchy but is not soggy either.  I would recommend saving some crisp bacon back and adding it to individual plates if someone wants crispy bacon.   Yes it is definitely a crowd pleaser.
