Momma's Tater Salad

By

Here’s my potato salad recipe for a crowd.

This is a real simple potato salad, we don't care for potato salads with unecessary ingredients here in the south!

And PLEASE do not show up at our party with store bought potato salad...Big NO NO!

I made this for my grandsons second birthday party.

It was my mom’s recipe!

She said the SECRET TO YUMMY POTATO SALAD is putting it together while ALL ingredients are HOT !! Then refrigerate overnight.

Medium bag russet potatoes
1 small white onion
Dill pickle relish
Small jar real mayonaise
Yellow mustard
6-8 hard boiled eggs
Salt & pepper

  • Boil potatoes with skins on until tender & skins are cracking, then drain off the hot water
  • Peel off skins as soon as they are cooled enough to handle.
  • Put all the potatoes in a large bowl
  • Boil eggs at the same time
  • Peel & add to the hot peeled potatoes
  • Add add small jar real mayonaise
  • Add some yellow mustard about 1/4 cup or less
  • Add finely chopped  onions
  • Add  half jar dill pickle relish
  • Add lots of salt & pepper
  • Use a knife to cut through all the potatoes & eggs to bites size pieces, then mix it all up
  • Let someone taste test it to see if you need to add anything ( hubbys favorite part!)
  • Store overnight so flavors can blend

Have a great Fourth of July Weekend!

Hi Tracy Lee Parker I am definitely trying this recipe.   One comment sticks out huge to me and I have never heard it but will try it, Mike "She said the SECRET TO YUMMY POTATO SALAD is putting it together while ALL ingredients are HOT !! Then refrigerate overnight."

Hi Mike, It is SO easy to make with no fancy ingredients! This helps when  you are as busy as me! You can add stuff if you want though!

Yes, store bought potato salad is awful, as is macaroni salad.  I may as well add guacamole from the store to the awful list !! My daughter worked at a mexican food restaurant & showed me how to make it. I will post that one next time! Thanks for the reply!

Hi Tracy-I was taught to make potato salad the same way by my grandmother! Put the ingredients in while the potatoes are still hot so that they absorb all of the flavors. I love your recipe and yes...add mustard!!!!   By the Way...I have to add...I've never made potato salad because my cousin always makes it for family gatherings and it tastes just like my grandmother's.

That sounds delicious. I do something similar but with dijon and no eggs. That being said, I'm going to have to try this one!

Finally someone else that uses eggs with potato salad!  Friends of mine balked when I told them I use them in potato salad.  I think it makes it a one dish meal!   Great post and recipe!

Tracy Lee Parker - You shared the perfect potato salad. Mine is very similar. This was a great entry and a medium size bag of russet potatoes goes a long way to satisfying many stomachs!
