Avocado Egg Salad Recipe
As we continue our journey to healthier eating, I’m finding that anything with avocado is usually a big hit! This avocado egg salad is a healthy alternative to egg salad made with mayo. It is heavy on the flavor with seasonings that blend incredibly well together.
Avocado is a creamy & delicious alternative to using mayo, blended cottage cheese or greek yogurt.
INGREDIENTS
- 1 avocado
- 6 hard-boiled eggs
- ½ cup grape tomatoes cut into quarters
- 4 - 6 strips bacon cooked until crispy and then chopped
- ½ C scallions or red onion, chopped
- ½ C celery, chopped
- 1-½ tsp dijon mustard
- ½ tsp sea salt
- ½ tsp garlic, minced finely
- ½ tsp black pepper
- Garnish with fresh dill
- ½ tsp garlic salt
- ½ tsp smoked pepper
INSTRUCTIONS
- Cook hard-boiled eggs, peel and let cool in the refrigerator
- While the eggs are cooling, cook bacon until crispy, using you preferred method of cooking
- In a medium bowl combine eggs, avocado, mustard, garlic and salt; smash with a fork until combined. *I leave about 1/4 of the avocado ‘chunky’ for texture.
- Add in bacon pieces, tomatoes, celery and onions. Mix well.
- Garnish with fresh dill and a sprinkle of garlic salt and smoked pepper.
- Serve in a bowl, on a sandwich, on toast or in a lettuce wrap.
- Top with nuts, seeds or diced cucumber.
