Greek Cucumber & Tomato Salad with Feta

Last Saturday evening, several of my family met at my daughter Jill's home.  The occasion was to celebrate my grandkid, Macie's birthday.  The food was really good.  I neglected to take many pictures; but did manage this one of the Greek salad, I put together for the dinner.

Greek Cucumber & Tomato Salad

Here's the recipe:

  • Sliced Persian Cucumbers
  • Cherry Tomatoes (from my garden)
  • Red Onion sliced
  • Feta Cheese
  • Fresh Mint Leaves
The dressing was made with Red Wine Vinegar and Garlic Salt.

Loved the recipe, I just do not use fresh onions of any kind, too strong for our taste, generally when I do use onions it is sauteed in olive oil and softened to the point that you do not feel... well you know, Endre

Looks and sounds wonderful Myrl!  Nothing like fresh veggies from the garden.  And feta is a nice flavor enhancer! Very Mediterranean!

Kathy Streib - My daughter had set up a pasta bar, with grilled chicken breasts.  There was plenty of toasted garlic bread to go along with it all.

Wayne Martin - Give the recipe a try.  I think you'll like it!

Nina Hollander, Broker - There is a version of the recipe that leaves out the cheese.  It's good as well.

Will Hamm - It's one of those recipes that you can make a little ahead, and not be stressed while making actual dinner.

LOVE Greek salad! Being so close to Tarpon Springs, which is a LARGE Greek community, many restaurants around here offer it and Ron makes it for me 3-4 times a week! Healthy choice!!
