3 Ingredient Peanut Butter Cookies

When my husband cooks, he loves many ingredients, textures, and flavors that combine on your tongue. Not me. I want a simple list of pantry items ready to go when I want to cook.
My granddaughter almost had a stroke when they sent home the note that she could no longer have her peanut butter and honey sandwich for lunch at school each day in the first grade. She was in tears because they wanted her to do without her favorite lunch, and no one else was being punished. After much discussion on what could be substituted and how we would fix her need for peanut butter and honey sandwiches, we came up with a solution.
No peanut anything at school, but the rule did not work at Grandma's house. Peanut butter and honey sandwiches for breakfast, snack, lunch, dinner, after dinner... whenever she wanted it at my house, and we also taught her how to make simple peanut butter cookies for when we were traveling or at the park.
Simple Peanut Butter Cookies
1 Cup Peanut Butter--creamy or crunchy
1 Cup white sugar
1 egg
Mix ingredients, drop by teaspoonful onto an ungreased cookie sheet, and cook for 10 minutes, turning halfway through. Leave on pan for 10 minutes to cool, and then put on cooling rack. Store in airtight containers. The recipe will make 30 cookies; if you add 1/2 cup mini chocolate chips, it will make about 40 cookies.
Of course, this granddaughter is through with high school, and this summer, she is at Fort Jackson doing basic training with the National Guard. Look out, world; here she comes.
