Friday Dinner at a Catholic Beverly Hills Gourmet Realtor's Home... no this is not your traditional meal your parents did. Baked or Fried Fish Sticks...
Instead, it is a Rainbow Poke Bowl but with not with fresh Tuna instead it is with canned Tuna... Honest it was good do not turn your nose up. check out the photos and the recipe.
Ingredients: these need to be pickled no worries takes no time at all
Peeled and cut into thin matchsticks: Daikon radish
One Persian cucumber thinly sliced without peeling it
The Pickling consist of 1/2 cup of rice wine vinegar & 1/2 cup of water boiled. Once you boiled it put the radish and the cucumbers in a jar with the cilantro sprigs and pour it over close the lid and set it aside... periodically shake the jar to get the marination evenly.
While this is marinating, if you have left over rice like I did, reheat the rice or make fresh rice. I am a fan of sushi rice for this meal I chopped some dried seaweed cut into thin shreds. Blend it with the rice. If you do not have leftover rice, make some sushi rice (plan another 30 minutes for it)
I then divided the rice into two bowls.
In the meantime, I made the dressing:
1/4 cup of sesame oil
2 tablespoon of soy sauce
1 tablespoon of rice wine vinegar
1 tablespoon of orange juice
1 teaspoon of minced pickled ginger I prefer it over fresh ginger
1 teaspoon of sesame seed.( I like to toast them before)
Now the main part:
1/2 cup of shredded red cabbage
1/2 of shredded carrots
1/2 a ripe mango cubed
about a handful of microgreens
Take each bowl and add the vegies and the fruit in a presentable manner:
Once done add the tuna on top in each bowl.
Then add the marinated radishes and cucumbers
Lastly add the dressing on top and let it sit for a few minutes.
Let me know what you liked or did not in this recipe. Personally, I skipped the hot chili paste and the hot peppers but if you want to give it a kick feel free to add it.
If you want to add garlic and onions, do it with the marination.
