Extremely dry and excess moisture?  Can it actually be both?  We tend to be okay humidity wise by heating with a wood burning stove and keeping a kettle of water on it.

Sure, it can actually be both! The dryness from the wood stove can pull moisture out of the air, but things like cooking or boiling water can add it back, especially near the cabinets. Keeping the kettle on the stove definitely helps balance things out!
