Hey, it's the weekend, and we are once again sharing recipes with the BananaTUDES! group!
As I've mentioned previously, I am a member of a cooking club. There are six couples, and we meet every other month at a different home. The person who is hosting gets to pick a theme, and they will make the entree and side dishes. The rest of the attendees bring appetizers and dessert that are theme appropriate. And of course wine and/or other beverages.
Last night was our bi-monthly get-together, and the theme was Korean. I was on tap to bring an appetizer which apparently Koreans don't usually have. I did find a recipe for Korean BBQ Meatballs, which is what I made. And let me tell you, if you make enough, this could definitely be an entree. It was delicious! The picture above was taken after quite a few had already been eaten.
So here's the recipe:
Meatballs:
1 pound ground beef
1/2 cup panko bread crumbs
1 egg
5 cloves garlic, minced
1 Tbsp ginger, minced
2 Tbsp gochujang (I used the paste, not flakes)
2 Tbsp soy sauce
1 tsp sesame oil (I used olive)
2 Tbsp brown sugar
3 green onions
BBQ Sauce:
1/4 cup soy sauce
1 Tbsp honey
1 Tbsp brown sugar
1 Tbsp gochujang
1 Tbsp rice vinegar (I used white wine vinegar)
1 Tsp sesame oil
cornstarch slurry (1 Tbsp cornstarch and 2 Tbsp water)
Spicy Sesame Mayo:
1/2 cup mayonnaise
1 tsp gochujang
1 tsp oil
1/2 lime juiced
Directions:
Combine ground beef with all ingredients for meatballs. Mix until just combined. Roll into 1" meatballs.
Fry meatballs in pan on medium heat until all sides are brown and caramelized. This should take about 12-15 minutes. Remove from pan, and wipe out any really burnt bits from pan.
In the same pan add the BBQ Sauce ingredients - soy sauce, honey, brown sugar, gochujang, rice vinegar and oil. Mix well and bring to gentle simmer then add cornstarch slurry and mix until thick.
Shut off heat and add meatballs to sauce and mix until coated.
Make spicy sesame mayo by combining mayo, gochujang, oil and lime juice.
I put the sesame mayo on top of each meatball and served with toothpicks. There were none left by dinner.
And there you have it! I'm definitely going to be making and eating these again!
