This Week…Go Fish!

A few weeks ago, Anna "Banana" Kruchten  thought it would be fun to share recipes in the Bananatude Group on weekends. No contest or challenge in this…just a chance to share recipes.

Larry and I have been trying to eat more fish. Of course, given a choice, I’d much rather have a good old-fashioned hamburger and fries. However, we’re trying!

This is how I prepare my salmon; however, in full disclosure, I use Steelhead Trout. (more later)

Step 1:

Prepare a mixture of mustards. I mix yellow, grainy,  and honey mustard in a small bowl. You can use whatever mustard you have.

Step 2:

In a shallow pan or plate, mix breadcrumbs, panko, and grated Parmesan cheese until well blended. You can also add lemon pepper, rosemary, or any other spice you like.

Step 3:

Coat the fish in the mustard mixture, then the dry mixture.

Bake or Air Fry it!

I’ve been using my Air Fryer set at 400 for 5-7 minutes or 8-10 minutes, depending on the thickness of the filet.  You’ll want an internal temperature of 145 degrees.

Salmon vs Steelhead Trout

I used to buy sockeye or other salmon, but the gentleman in the seafood department at my H-E-B suggested the Steelhead Trout.

He told me they eat the same diet as salmon, have a richer, more buttery flavor, and cost about half the price of Sockeye. For more details, check this out.

Your choice but you might try the Steelhead!

ENJOY

Good morning!

First of all, I love steelhead although I think I have sockeye in the freezer.

I don't have an air fryer but bet this would be great either baked or maybe even fried. I'm going to try one of them tonight!

Thanks!

Kat Palmiotti I did it in the oven until I got an air fryer. 400 or 425  for 10-12 minutes depending upon thickness!

Good morning Kathy. We do not eat enough fish but have used a recipe similar to yours on salmon. May have to try it with the trout Thanks for the suggestion. Enjoy your day.

Wayne Martin we eat it because "you're supposed to"  Give this a try with the steelhead. It's less "salmony."

Kathy I would much rather have fish than meat, but oddly I have never cared for salmon.  By the way don't pay any attention to Brian England ...... LOL

George Souto LOL   For me...it's how the fish is cooked.   There is a Cuban restaurant in FL that had the best snapper.

Thanks for the recipe, Kathy. We eat a lot of fish, including salmon, and I enjoy trying the different types. I'll have to check out the steelhead trout next time I am at the fish market.

Enjoy your weekend!

Hi Kathy,
I had a friend deliver some fresh sockeye salmon to me yesterday. That's going to be on the menu today or tomorrow. I need to dig the air fryer I was gifted out of the garage and figure out how to use it.

Hi Kathy well I'm a little late to the fish fry but better late than never!!  Your recipe sounds delicious!  I'll be sure to give it a try.  We'll probably 'grill' the fish and adjust things accordingly.  I need to get my ducks in an row and post a recipe. It's been one of  'those' weeks so maybe I'll catch up this week.

Kathy, I read Kat's post a bit ago, so I knew she got your recipe and tweaked it.   I would have to use another fish, not a fan of salmon, too pungent.
