This Week…Go Fish!
A few weeks ago, Anna "Banana" Kruchten thought it would be fun to share recipes in the Bananatude Group on weekends. No contest or challenge in this…just a chance to share recipes.
Larry and I have been trying to eat more fish. Of course, given a choice, I’d much rather have a good old-fashioned hamburger and fries. However, we’re trying!

This is how I prepare my salmon; however, in full disclosure, I use Steelhead Trout. (more later)
Step 1:
Prepare a mixture of mustards. I mix yellow, grainy, and honey mustard in a small bowl. You can use whatever mustard you have.

Step 2:
In a shallow pan or plate, mix breadcrumbs, panko, and grated Parmesan cheese until well blended. You can also add lemon pepper, rosemary, or any other spice you like.
Step 3:
Coat the fish in the mustard mixture, then the dry mixture.
Bake or Air Fry it!
I’ve been using my Air Fryer set at 400 for 5-7 minutes or 8-10 minutes, depending on the thickness of the filet. You’ll want an internal temperature of 145 degrees.

Salmon vs Steelhead Trout
I used to buy sockeye or other salmon, but the gentleman in the seafood department at my H-E-B suggested the Steelhead Trout.
He told me they eat the same diet as salmon, have a richer, more buttery flavor, and cost about half the price of Sockeye. For more details, check this out.
Your choice but you might try the Steelhead!
