Spoiling Bananas? Make Banana Bread!

I baked this today with 3 overripe bananas rather than throw them away! This is an old family recipe that is easy and delicious!

Recipe

1 C granulated sugar

1/3 C shortening

3 mashed very ripe bananas

2 beaten eggs

1/2 tsp salt

1 tsp baking soda

2 C flour

3/4 C nuts (optional)

Cream the shortening and sugar, add eggs and mashed bananas and mix, then add the remaining ingredients until mixed well. Last, add nuts, if desired.

Bake at 325 for 1 hour in a greased loaf pan.

This recipe can be sliced and frozen or frozen whole.

LOL. I do the same. Try dried raisins or cranberries or shredded carrots. They are all also very good.

Hi Dee- I've learned to buy just a few bananas each time because as much as I love banana bread, we're trying to shy away from bread. That said, we have been known to make it. Your recipe looks easy.

Hello Dee - the "joy" of bananas can continue.    Frozen they can become part of a smoothie and mixed with other ingredients they can still be healthy as well as delicious.
