Friday Fun…A Different Pudding

This dessert recipe has been in my “repertoire” for more years than I can remember. In fact, it was on a small index card (remember those?) until I digitized it several years ago. I have no idea where I found it, but most likely it was in a magazine or the newspaper, back when I still took the paper and they had more than just ads in them.

Joann Carmody-Vasquez’ Hot Fudge Pudding
¾ c cake flour
1 ½ tsp. baking powder
Pinch salt/
½ cup sugar
1 ½ T. unsweetened cocoa powder
1 ½ T. melted butter
1/3 c half and half
2 ozs grated bittersweet chocolate
¾ tsp. vanilla
1 c. dark brown sugar
¼ c. cocoa powder
1 ½ c strong brewed coffee
Sift together, 2-3 times, flour, baking powder, salt, sugar, and cocoa powder. Put the dry mixture into a bowl, add half and half, grated chocolate, and vanilla. Stir until partially combined. Add melted butter; stir until combined, but don’t overmix. Pour batter into 8”x8”x2” buttered pan.
Sift together dark brown sugar and cocoa powder. Spread the mixture over the batter in the pan and pour on coffee. Bake at 350 degrees for 20-25 minutes.
Serve warm, topped with whipped cream or a scoop (or two) of ice cream; decorate with grated chocolate.
*You can make this ahead of time, up to pouring the coffee on top and baking it. I took it to a friend’s house and had the coffee in a separate container. Just before baking, pour on the coffee, then bake.
