A friend of mine brought a Bacon and Spinach Quiche to a brunch party we were hosting years ago. Of course she gave me the recipe! I've been a fan of this quiche ever since! It is so yummy! I mean who doesn't love bacon! And if you're not a fan of spinach you can always use something else that's to your liking.
Bacon and Spinach Quiche
6 large eggs, beaten
1 1/2 cups heavy cream
freshly ground black pepper, to your taste
2 cups fresh baby spinach, chopped and packed
1 lb bacon, cooked and crumbled
1 1/2 cups shredded swiss cheese (or whatever cheese you prefer)
1 (9inch) refrigerated pie crust, Place in glass pie dish
Directions
Preheat over to 375 degrees
Combine the eggs, cream, salt, pepper in bowl and blend together till smooth
Layer the spinach, bacon and cheese in the bottom of the pie crust
Pour the egg mixture on top
Back for 35 to 40 minutes until the egg mixture is set
Cut into wedges and enjoy!
