Hey, it's the weekend, and we are once again sharing recipes with the BananaTUDES! group!
As I've mentioned previously, I'm in a dinner club with five other couples. We choose a different theme each time we meet, and last night the theme was Brazilian. I made both a theme related appetizer and dessert, and I decided to highlight the dessert in this post.
-------------
I chose to make a dessert called Beijinho de Coco, which are Brazilian Coconut Balls. Actual cooking time is only about 10 minutes but you also need a few hours for cooling and about another 10 minutes for the final step. So here is the recipe!
Beijinho de Coco (Coconut Balls)
Ingredients
- 1 14 oz can of sweet condensed milk
- 1 cup of unsweetened, shredded coconut
- 1 tablespoon butter plus more for your hands
- 1/4 cup heavy cream
- 16 whole cloves for decorating (optional)
Instructions
- Add condensed milk, butter and cream to a medium sauce pan and place over medium heat until butter melts.
- After butter has melted, add 1/2 cup of shredded coconut to pan and stir.
- Continue to cook (I reduced heat to low) for approximately 10 minutes, stirring repeatedly, scraping sides and bottom of pan with spatula to avoid burning.
- The beijinho is ready when you scrape the bottom of the pan and the mixture takes 2-3 seconds to come back to its place, or when the mixture reached 210-220ºF.
- Pour hot coconut mixture into dish or plate, cover with plastic wrap and let cool about 2 hours. I put in refrigerator for a few hours.
- When the mixture has cooled, butter your hands and scoop 1/2 Tbsp to 1 Tbsp and roll into little balls.
- Roll the balls in the remaining 1/2 cup of shredded coconut and insert whole clove in each ball to decorate.
- Keep in refrigerator until serving time.

Additional NOTE: Make sure all your guests hear you say that the clove is for decorating purposes and not to eat it. Otherwise you'll have a conversation like this:
M: KAT! What are the ingredients in these coconut balls? Something made my mouth go ZOOM.
Me: Uh, hmm, just milk, butter, cream and coconut!
M: No, it was something else...
Me: Oh no, did you eat the clove?????
M: HAHAHAHAHA, Yes
