This past week on our ActiveRain Zoom call, sweet potatoes were discussed. Specifically because Debe Maxwell, CRS 's overview of North Carolina included the fact that NC is the biggest producer of sweet potatoes in the United States, growing 60% of all US potatoes. I shared a story about a friend of mine from the Carolinas who cannot stomach the tubers. Then I also mentioned in another post on ActiveRain that I was going to help North Carolina by eating sweet potatoes that evening. I was then asked for the recipe.
"No, no," I said, "There's nothing to share!"
"Share anyway!"
OK, here you go!
Lazy Person's Sweet Potato Recipe
Serves: 2
Ingredients:
Two big sweet potatoes, the biggest you can find.
Directions:

Using a vegetable scrubber, scrub the outside to remove any dirt or loose parts. Color or size of vegetable scrubber is not important. - Place two sweet potatoes on a microwave safe plate. Poke some holes in the top with a fork. If you're angry with someone at the time, you can stab the potato with force.
- Carefully place in your microwave oven. Cover with a microwave splatter cover if desired.
- Cook on high for 6 minutes.
- Open microwave. Check firmness. If they are big as required in list of ingredient(s), they will not be done. Flip the potatoes so a different side is facing the outside of the plate. Place on high for 6 more minutes.
- When the time is up, check again for firmness. If they are not yet done, add another 3 minutes.
- Take out of the microwave, place on serving plates, and serve with your choice of toppings: Butter, Sour Cream, Dressing, Chives, Scallions, etc.

And there you have it! Making food does not need to be difficult. Sometimes we just throw crap on a plate and cook it.
