Tuesday's presentation on North Carolina’s three wonderful regions — from our cool, misty mountains to our breezy coastal plains — reminded me how proud I am to call the Tar Heel State home. Naturally, our conversation turned to one of my favorite topics… food!

When the group began talking about North Carolina’s top agricultural exports, I couldn’t resist sharing that sweet potatoes are our state’s #1 exported vegetable crop. That little fun fact must’ve stuck with me, because on my drive home that evening, all I could think about was one of my favorite comfort foods: Sweet Potato Fries with Roasted Marshmallow Dip.

This dish is the definition of simple Southern goodness. It takes 'common' ingredients — sweet potatoes, olive oil, and marshmallows — and turns them into something nostalgic, cozy, and downright irresistible. The salty crispness of the fries paired with the creamy sweetness of roasted marshmallow dip? Let’s just say it’s Southern hospitality on a baking sheet.

So, in honor of our state’s most famous root veggie, here’s a quick and delicious recipe to celebrate Carolina flavor at its finest.

ngredients

  • 4 sweet potatoes, peeled and cut into sticks

  • 3 Tbsp olive oil (I love Bacon Olive Oil from Bad Daddy’s for a smoky twist)

  • Sea salt, to taste

  • ½ bag large marshmallows

  • ½ cup heavy cream

  • Optional but divine: A sprinkle of cinnamon for a warm, fragrant finish


Instructions

  1. Prep the Potatoes: Peel and slice into uniform sticks or wedges for even baking.

  2. Season & Toss: In a large bowl, coat the fries with olive oil, sea salt, and a touch of cinnamon (if you’re feeling fancy).

  3. Bake Until Crisp: Preheat the oven to 475°F. Spread fries in a single layer on a parchment-lined baking sheet. Bake for 25–30 minutes, flipping halfway through.

  4. Roast the Marshmallows: Line a small pan with foil, add marshmallows in a single layer and roast for about 5 minutes until golden and puffed.

  5. Blend the Dip: Transfer those gooey beauties into a blender, add heavy cream, and blend until smooth and silky. Add a splash more cream if needed.

  6. Serve with Style: Plate your fries, pour the dip into a small bowl, and finish with a dusting of cinnamon. Serve warm and watch them disappear!

That sounds like a good dish. My wife likes sweet potato fries and a sweet potato casserole topped with roasted marshmallows. I like a sweet potato hash with caramelized onions, brown sugar, and bacon. I think the marshmallow dip would make a great topping for the hash. Thanks for posting the recipe and inspiring me.

Hmm, that sounds really interesting. I don't think I have ever had a marshmallow dip, haha.  I do eat white sweet potatoes these days instead of other potatoes.

Hi Brian England! As long as I've lived in NC (probably 6 decades now), it was not until 2015 that I learned of it! There's a little restaurant in South Charlotte (Ballantyne) that serves the most amazing burgers AND sweet potato fries and this is where I discovered the marshmallow dip. I knew then that I had to figure out how to replicate it and I think I finally did!! I promise, it's not only yummy but, it's super easy!

I do enjoy sweet potato fries and have a recipe that includes a few more spices/herbs. But my sweet potatoes don't get extra sugar - they are scrumptious without! Although... if I ever visit you, I would certainly try one of these!

Oh, they are SO good, Kat Palmiotti. They melt in your mouth and there is something about that dip that reminds me of camping out as a kid--baking them on the open fire and then roasting marshmallows. I never thought to combine the two until about 10 years ago.

Try it, you'll like it, George Souto!! They really are yummy and the marshmallow dip typically hides the 'bitterness' that some people say keeps them away from eating sweet potatoes.

Oh my gosh, it is SO good, Nina Hollander, Broker! You know I discovered this at Burger 21 in Ballantyne!! They have THE best burgers (and I very rarely have a burger) and the best sweet potato fries...and dip! I was determined I was going to figure out how to recreate that dip and I did - about 10 years ago. I have a bit of a sweet tooth though so, this was right up my alley!

Debe Maxwell, CRS - Your Southern Sweet Potato Fries recipe is one I'll definitely try! It will be perfect for the holidays or anytime! I no longer wait for holidays to eat what feels right for me. I also love Sweet Potato Fries but never made them. I have ordered them from restaurants. Usually, the wait staff will ask if I want ranch dressing or ketchup for my fries. I ask for Maple Syrup. They are always stunned and tell me; they'll have to try it. I love it! I also love to eat them dipped with Ranch Dressing!

YES!!! I do the same thing, Patricia Feager! My turkey fryer gets used a couple of times throughout the year as I LOVE fried turkey. It's great for turkey salad and turkey sandwiches after you've had a great meal with it. 

As for the maple syrup - a big YES to that too! That's what I always did before I started making this marshmallow dip - that and brown sugar/cinnamon on the melted butter. Oh, I'm so craving a sweet potato right now!! LOL

Hi Debe I love sweet potatoes!  I am not a fan of marshmallows or sugar for that matter but I can see for some folks how this would be right up their alley!  Maybe for a big party I could make some and surprise them all!

Debe- I'd never thought of a roasted marshmallow dip!!!  I know mini-me would love it. There is nothing like southern cooking!!!  BTW- tomorrow is Texas Chicken Fried Steak Day.

What The Heck... Sweet Potato fries with marshmallow dip?  I have seen sweet potatoes with marshmallows on top, but not in a million years would I have thought of making a marshmallow dip. Now you have me curious to try it.
