Sweet Potato Fries with Roasted Marshmallow Dip RECIPE—A North Carolina Classic Worth Savoring
Tuesday's presentation on North Carolina’s three wonderful regions — from our cool, misty mountains to our breezy coastal plains — reminded me how proud I am to call the Tar Heel State home. Naturally, our conversation turned to one of my favorite topics… food!

Ingredients
4 sweet potatoes, peeled and cut into sticks
3 Tbsp olive oil (I love Bacon Olive Oil from Bad Daddy’s for a smoky twist)
Sea salt, to taste
½ bag large marshmallows
½ cup heavy cream
Optional but divine: A sprinkle of cinnamon for a warm, fragrant finish

Instructions
Prep the Potatoes: Peel and slice into uniform sticks or wedges for even baking.
Season & Toss: In a large bowl, coat the fries with olive oil, sea salt, and a touch of cinnamon (if you’re feeling fancy).
Bake Until Crisp: Preheat the oven to 475°F. Spread fries in a single layer on a parchment-lined baking sheet. Bake for 25–30 minutes, flipping halfway through.
Roast the Marshmallows: Line a small pan with foil, add marshmallows in a single layer and roast for about 5 minutes until golden and puffed.
Blend the Dip: Transfer those gooey beauties into a blender, add heavy cream, and blend until smooth and silky. Add a splash more cream if needed.
