Texas and North Carolina…Different and Both Great States
This has been a busy week for me so after the Zoom Call on Tuesday, hearing Debe’s stats and information about North Carolina, I couldn’t wait to dig into the stats on Texas. I shared that on Thursday.
However, I still have our Zoom homework, which was to compare some of NC’s stats with those of our own state.

Here are some quick comparisons.
NFL: First, our Houston Texans stink. The Panthers are somewhat better.

Shoreline: We both have our share of hurricanes.

North Carolina Regional BBQ style
I grew up on BBQ in Texas. There was also Tex-Mex and Chicken-Fried Steak, but Texas BBQ is the rule. The annual Houston Livestock Show and Rodeo hosts the World’s Championship Bar-B-Cue Contest.
The first time I had BBQ from North Carolina, I said (and my apologies to my NC friends) THIS is NOT BBQ! The meat was not beef and was shredded, with an orangy, vinegary sauce.

Here, for my non-Texas friends, is a recipe for Texas BBQ sauce. It is from the Houston Livestock Show and Rodeo’s 50th Anniversary Cookbook. The measurements below are a fourth of what the recipe calls for, but make as much as you need. The full recipe makes a gallon of sauce.
BBQ Sauce:
2 c. Catsup
2c. Water
1 ½ t. chili powder
1 ½ t. salt
1 ½ t. sugar
¼ t. cumin
1 T. Vinegar
1 T. Cooking oil
1T. Worcestershire
Combine ingredients and simmer for about 3 hours.
