Our Family’s Addictive Sautéed Zucchini Bites

Warning: these disappear faster than you can say “pass the platter!”

If you're looking for an easy, crowd-pleasing appetizer that always gets rave reviews, this one has been a family favorite for years. It’s simple, crunchy, garlicky goodness, and trust me, once you make them, you’ll be in the “just one more” club too!

Ingredients & Steps:

  • Slice fresh green zucchini into rounds, not too thin, not too thick (Goldilocks style!)
    • Crack several eggs into a bowl, add a splash of milk, and whisk like you mean it
    • Crush saltine crackers into crumbs (a rolling pin works wonders!) and season generously with garlic salt and pepper
    • Dip zucchini slices into the egg mixture, then coat in the cracker crumbs
    • Layer them on a pan and pop into the fridge for a couple of hours, or prep in the morning and forget about it until party time
    • Heat olive oil in a skillet, then sauté zucchini rounds until both sides are golden, crispy perfection
    • Transfer each batch to a warm 300° oven while you finish cooking, this keeps them toasty and ready to devour (it they haven’t eaten them first)
    • Stand back, the family stampede begins now!

Serve warm and watch them vanish.
Pro tip: Make extra. And then make more.
Because just when you think you’ve made enough… you haven’t.

Happy nibbling, and may your kitchen be filled with crunching, munching, and happy little snack-thieves!

Oh my gosh, we used to make something similar and served them with ranch dressing, Dorie! I haven't had them in YEARS and need to add them back to my rotation for get-togethers. Thank you so much for sharing this recipe and I do love your AI featured graphic!

I can see it is a healthier choice than some of my favorites. Glad you are steering your family the right direction Dorie. Those chicken wings, nachos, potato chips and onion tip may become a thing of the past.

Good morning, Dorie. I love zucchini bites... but I never make them. I only ever order them when they are on a restaurant menu!

I have tried zucchini a couple of times and it's just not my thing, haha.  I do like cheese curds or mozzarella sticks, though.

Dorie these sound great!  For sure going in my party list of apps!  If they go as fast as those little hog dog things my friend makes for every party we have - better triple the batch!

Dorie, this sounds perfect for us. I love the fact that they are not fried which was the only recipe I had until now. I know what I will be making soon!
