This Week…Bundt You’ll Want to Try This!
Today is National Bundt Day, so for Bananatude’s Weekend recipe, I’m sharing the recipe for Cream Cheese Pound Cake. I’ve been making this cake for years and hope you'll love it.

The Bundt pan was developed by the owners of Nordic Ware in response to a request from a group of Jewish women who wanted to recreate a traditional kugelhopf. Sales of the pan were slow until 1966 when the Tunnel of Fudge cake was introduced at the Pillsbury Bake-Off. Sales took off! I remember how excited we’d get when my mother announced she was making it!!
The fun part for me has always been decorating it with a confectioner’s sugar and milk glaze. Basically, add a small bit of milk to confectioner’s sugar until it reaches the consistency you want. You can add vanilla if you wish.
You can tint the glaze for a holiday or special sports occasion. The one below was for an Eagles game.

Or if you really want to make it special, you can make a spun sugar web to place on top of it. *NOTE- if the humidity is high, you’ll have to close the window and turn the A/C on, or your sugar will start to melt. I know this from personal experience!
Cream Cheese Pound Cake
1 ½ c butter, softened
1 (8 oz) pkg cream cheese, softened
3 c. sugar
6 lg eggs
1 ½ tsp vanilla extract
3 c. all-purpose flour
1/8/tsp salt
BEAT butter & cream cheese at medium speed with an electric mixer 2 minutes or until creamy. Gradually add sugar, beating 5-7 minutes. Add eggs, one at a time, beating just until the yellow disappears. Add vanilla, mixing well.
COMBINE flour and salt; gradually add to butter mixture, beating at low speed just until blended after each addition. Pour batter into a greased and floured 10 inch tube pan. (or Bundt pan)
Fill a 2-cup, ovenproof measuring cup with water; place it in the oven with the tube or bundt pan.
Bake at 300 degrees for 1 hour and 30 minutes or until a wooden pick inserted in the center of the cake comes out clean. Cool in pan on a wire rack 10 – 15 minutes; remove from pan and cool completely on wire rack.
