This Week…An Old Favorite for Thanksgiving

 

This week, when I was making the greys disappear, my hairdresser mentioned her favorite side dish for Thanksgiving. Squash casserole!

 

It was a favorite of mine that my mother and grandmother made. I haven’t made it in years, so I’m dusting it off for this Thanksgiving. I’ve altered it a bit, but as in any savory dish, you can do whatever you want to it!!!

 



Easy Squash Casserole

 

4 Medium yellow squash

Salt & Pepper (to taste)

½ tsp salt/1/4 tsp pepper

1 cup milk (or even better, heavy whipping cream

1 egg

1 tsp sugar

Sliced black olives (optional)

1 cup shredded cheddar cheese (4 -8 oz)

1 cup cracker crumbs/bread crumbs/or Panko crumbs

 

Slice the squash, Boil in salted water and drain well. Place in a bowl and mash. Add milk or heavy whipping cream, 1 egg beaten, sugar and if you want, black olives. Add the egg mixture to the squash.

 

Place the mixture in a greased casserole dish. Cover the squash with more cheese and bread crumbs. 

 

Bake at 350 degrees for 20-30 minutes until the squash is set.

Hi Kathy, 
Thanks for a recipe I've never heard of before. I've made yam casseroles, which is my favorite side dish, but never one with squash.  I'm a little confused about the first part of the instructions. I am assuming you slice the squash and then cook it first to get it soft enough to mash?

Good morning Kathy. My son gets asked potatoes with his prime filet mignon. My grandkids get their Mac & Cheese. That leaves the traditional dinner for my daughter-in-law, wife and me for the rest. No squash casserole but the wife and I eat squash regularly. Enjoy your casserole.

This sounds good Kathy!  I have been thinking about what side dishes I want to make and this just might be one of them.  I need to make sure Gary likes squash as it's not something I cook with....don't think I ever have.  Which now seems odd to me!

I've always enjoyed squash, but unlike most people I prefer it with butter and salt and not usually in casserole form. I'm funny like that with pumpkin and/or squash pie...prefer mine plain instead of the marshmallow topping many people love.
