I've been spending some time this year deciding what to make for side dishes for Thanksgiving. I went through a whole bunch of recipes and then - Les Voila - found a scalloped corn casserole that I used to make and everyone loved. You'll love it because it's so easy to make ahead with only 15 minutes of prep time.

Scalloped Corn Casserole
1/3 cup chopped green onions with tops
3 eggs
1 can cream-style corn, undrained
1 package (8 1/2 ounces) corn muffin mix
1 can whole kernel corn with red and green bell peppers , drained
PS when I went shopping for the above ingredient the other day I discovered it's not being made anymore! So just buy a can of corn and a green and red pepper and cut them up. Easy!
1 cup reduced fat sour cream
2 tablespoons butter, melted
1/8 teaspoon ground red pepper
1. Preheat over to 375 degrees
2. Spray a non-stick baking dish with cooking spray
3. Wash the green onions and pat dry with paper towel before chopping. Chop onions.
4. Whisk the eggs is bowl. Add the green onions and all the remaining ingredients, mix until well blended.
5. Pour mixture into baking dish, bake 35 to 40 minutes or until the edges are golden brown.
Makes 10 servings
