Easy Scalloped Corn Dish - Perfect for Thanksgiving

I've been spending some time this year deciding what to make for side dishes for Thanksgiving. I went through a whole bunch of recipes and then - Les Voila - found a  scalloped corn casserole that I used to make and everyone loved. You'll love it because it's so easy to make ahead with only 15 minutes of prep time.

Scalloped Corn Casserole

1/3 cup chopped green onions with tops

3 eggs

1 can cream-style corn, undrained

1 package (8 1/2 ounces) corn muffin mix

1 can whole kernel corn with red and green bell peppers , drained

PS when I went shopping for the above ingredient the other day I discovered it's not being made anymore! So just buy a can of corn and a green and red pepper and cut them up.  Easy!

1 cup reduced fat sour cream

2 tablespoons butter, melted

1/8 teaspoon ground red pepper

1. Preheat over to 375 degrees  

2. Spray a non-stick baking dish with cooking spray

3.  Wash the green onions and pat dry with paper towel before chopping. Chop onions.

4. Whisk the eggs is bowl. Add the green onions and all the remaining ingredients, mix until well blended.

5. Pour mixture into baking dish, bake 35 to 40 minutes or until the edges are golden brown.

Makes 10 servings

 

Give it a try!  I guarantee it will be a crowd favorite. It always has been at our holiday dinners.  Let me know how you like it!

Well that settles it, Anna. I found a recipe for Jiffy Corn Casserole that sounds similar to this. However...your recipe looks a lot easier to make!  I may make it instead!!

It's so easy Kathy Streib !   Heads up when we shopped for corn with pepepers we discovered nobody is making them.  So just use another can of whole kernel corn and add some red and green peppers slices.  Easy enough!

Good morning Anna. This one a=sounds as a must make but won't make our Thanksgiving table? Why? Because my gout of finicky eaters don't understand goo d stuff and are set in their ways. My grandkids, spoiled by their parents, will graze on whatever. My son will have a prime filet on the grill with maybe some mashed potatoes. That leaves the wife and I and my daughter-in-law for the traditional turkey and sides. Did I mention she is also finicky? So, your scalloped corn dish will have to wait until it is just the wife and me to consume it Enjoy your day.

LOL now that's funny Wayne Martin - sounds like a typical family to me.  Some like it hot....some not so much!  This dish is great any time of the year so enjoy it when you do get around to it.  PS be sure to see my updated PS on the recipe.

Good morning, Anna... this sounds great. I love corn. Sadly my husband hates it... as a Dutchman he considers it feed for cattle. So I'll need to wait to make it when I have company that is "American."
