Great Point Sandra. Simple is better especially if the cook(s) will have difficulty getting it all out on the table at the same time and HOT. Cold gravy and the mashed potatoes out of the oven 20 minutes after the turkey has been passed around mean keep it more simple and less choices to prepare.
