Ingredients

  • 1 lb fresh broccoli florets
  • 1 1/2 cups cooked cubed chicken
  • 1 10.5 oz can condensed cream of broccoli soup
  • 1/3 cup milk
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp dried breadcrumbs
  • 1 tbsp butter melted

Instructions

  • Preheat oven to 450°F. Steam or boil the broccoli for 5 minutes until crisp-tender. Drain and transfer to a 9-inch pie plate or baking dish.
  • Top the broccoli with the cooked chicken.
  • In a bowl, mix together the condensed soup and milk until smooth. Pour over the chicken and broccoli.
  • Sprinkle the cheddar cheese over top of the sauce.
  • In a small bowl, mix together the breadcrumbs and melted butter until combined. Sprinkle over the cheese.
  • Bake for 15 minutes until hot, bubbly, and golden brown on top.
  • Let cool 5 minutes before serving.

Hi Will,
I'm not really a broccoli fan, but this sounds pretty good. Since my Dr. says to watch the sodium intake, I'd probably opt for a homemade alternative to the canned soup. Thanks for sharing.

Carol Williams these days you can find low sodium alternatives for canned soup like this, which I use for my husband.

Hi Will... I love broccoli (unlike our friend Carol Williams). I know this was a very popular dish in the 1950's and 1960's. Will need to resurrect it at some point when I have cooked chicken in the fridge.

Thanks for the recipe - sounds great and easy to fix. Seems to me I had chicken divan many years ago as this sounds familiar. I am a big broccoli fan!

Hi Will- this is very similar to a recipe a friend gave me when I was starting out on my own. It was in the mid-70s. My recipe uses cream of chicken soup and I think my sauce has some mayo and curry in it. 

These days, I make it but layer rice on the bottom, then broccoli spears and chicken with the sauce on top. It's one of our favorites.

I've never seen cream of brocoli soup.  I kind of make up my own versions in my head and go with it.  The dish sounds like a great weeknight dinner Will!

Good morning Will Hamm. I have read tow of your posts this morning before this one. If I moved to your area I would have to buy the house next door and have a pathway to your door. T my expense I would have a wine refrigerator at you house for convenience and would be an uninvited frequent guest until you called the police, ha, ha. Great recipes. Enjoy your day.
