I'm a day late for the weekend, a time when ActiveRainers share various recipes with the community, and with the BananaTUDES! group. But I remembered to take a photo of our Saturday night dinner, and thought our entree would make a good share.
I made crab cakes, big huge ones that I served on a potato bun with a salad on the side and some remoulade sauce. This simple-to-make recipe could be used to make four or six smaller crab cakes if preferred.
So here are both recipes:
Crab Cakes
- 1 egg
- 2 Tablespoons mayonnaise
- 2 teaspoons lemon juice
- 1/8 teaspoon red chili/pepper flakes
- 1 tablespoon minced spring onions/scallions
- 8 ounces crab meat (I used 12 ounces)
- approximately 25-30 crushed crackers (I used ritz)
- 1 Tablespoon butter
In a medium bowl, whisk the egg, mayo, lemon juice, pepper flakes and scallions. Gently stir in crab meat, being careful not to break up the meat. Gradually mix in cracker crumbs, adding until desired consistency is achieved.
Heat butter in a frying pan over medium heat. Form crab mixture into cakes and fry about 5 or 6 minutes per side.
Remoulade Sauce
Mix the following ingredients together:
- 1/2 cup mayonnaise
- 1 Tablespoon sweet relish
- 1/2 Tablespoon lemon juice
- 1 teaspoon hot sauce
- 1 teaspoon capers
- 1 teaspoon paprika
- 1/2 teaspoon Dijon
- 1/2 teaspoon Worcestershire
- 1 clove garlic, minced
That's it! I used potato rolls but your favorite rolls would work fine. They would probably be even better if toasted a bit.
