Creamy Chunky Potato Soup Perfect on a Snowy Day

   Creamy Chunky Potato Soup

  Serves: 4–6
  Prep time: 45 min
   Cook time: 60–90 min


Ingredients

6–7 medium potatoes, peeled and diced

  • 2 celery stalks, diced
  • 1 onion, chopped
  • 2 carrots, diced

1 bell pepper, chopped (any color)

3–4 mushrooms, sliced

2–3 cloves garlic, minced

2 cups milk (whole or 2%)

½–1 cup cheese, shredded (cheddar or similar)

¼ cup sour cream

1/2 a stick of  butter or a bit of oil

Salt and black pepper, to taste

Optional: a pinch of thyme, parsley, or paprika, if you have any


Instructions

🧈 Sauté the vegetables:

In a large pot, melt the butter (or use oil).

Add onions, celery, carrots, peppers, and mushrooms.

Cook until softened (about 5–7 minutes).

Add the minced garlic and cook for 1 more minute.

🥔 Add potatoes and simmer:

Add the diced potatoes and enough water (or broth, if you have it) to cover everything

by about an inch.

Bring to a boil, then reduce the heat and simmer until potatoes are tender, about 15–20 minutes.

🥣 Make it creamy:

Once the potatoes are soft, mash some of them in the pot (a potato masher or spoon works fine). This helps thicken the soup naturally.

Pour in the milk and cheese. Stir continuously over low heat until the cheese melts

and the soup gets creamy.

🍶 Finish with sour cream:

Turn off the heat.

Stir in the sour cream for extra richness.

  • Taste and adjust with salt and pepper.

🌿 Serve:

  • Ladle into bowls and top with a sprinkle of extra cheese or a bit of herbs if you have them.

🔁 Optional Variations

For extra thickness: blend part of the soup, then pour it back in.

For a flavor boost: sauté a bit of bacon or sausage first, then cook veggies in that fat.

For a lighter soup: use less cheese and milk, or replace part of it with broth.

This soup is perfect for a snowy winter day as you watch the snow falling

Hi Hannah- we're at 38 degrees now and we expect it to drop into the 20s overnight!  I'm hoping we don't get the ice those up north may get. I'll have to try the recipe.

Kathy Streib  Once I add the sour cream at the end, all the flavors blend, and it's really delicious.  I plan freeze some. We were at 12 last night, and I pulled out another electric blanket. We are in a state of emergency. Airports and transits are closing, as are schools tomorrow.

Will Hamm  I am pleasantly surprised as I have made so many soups, but never a potato soup. I am delighted with the way it turned out. I wasn't sure, as most of the recipes did not have veggies, and I have so many, and I'm  glad I do, as it is very flavorful and nutritious 😄
