Apple Coffee Cake 8x8 baking pan, preheat over 350 degrees
- 2 cups of flour
- 1 1/2 cups of white sugar
- 1/4cup of veg oil
- 1/14 of melted butter
- 2 tsp of cinnamon
- 1 tsp of vanilla
- 1 tsp of almond extract
- 1/3 cup of sour cream
- 1 large apple, cubed ( add a handful of nuts or raisins if desired)
- 1 tsp baking powder
- 1 tsp baking soda
- It is important to choose a large sweet apple
Whisk all dry ingredients together
In a separate bowl, mix the wet ingredients, then add them to the dry ingredients, except for the cubed apples—add them at the end. If adding nuts or raisins, you can add them to the batter. I peel the apples, although the original recipe said not to. This is a variation of the original
Butter and flour your pan. I always put a piece of parchment paper on the bottom and grease that too, but it is not necessary, just a trick I learned
Pour the batter into the 8x8 pan. Now take the cubed apples and sink (push) them into the batter. Hopefully, you picked a big apple and have enough apples to sink them throughout the whole batter. The batter will start to cover the apples. There you go, you are done.
Place the pan in the oven for about 40-45 minutes. If it is moves or giggles, it needs a few more minutes - if it is golden brown, it is done, but stick a toothpick in and check if it comes out clean, it is done
I am a firm believer that all ovens are different so you may want to check after 30 minutes, but I think the apples need more time to cook
If you did this right, the cake will melt in your mouth, and you will be amazed that you made it. If you would like to top it with Ice Cream or make a butter-and-powdered-sugar glaze, I am sure you can find a recipe. But it really is good on its own.
