It's the weekend, a time when ActiveRainers share various recipes with the community, and with the BananaTUDES! group.
Last night we attended our neighbor's annual Christmas-tree burning party. For those who don't know, we live in a rural community in Northwest Montana, where burning of wood, brush and trees is allowable during certain times of the year. And unlike much of America, we are not in a residential development with homes right next to each other, but are all spread out with lots of space between homes. This sets the stage for how it is we can gather annually at a neighbors house and throw our dried out Christmas trees on the fire!
Anyway, the hosts get the fire ready and pile up palettes to keep it going. Then the attendees bring their trees (or not). One couple drives around town at night after people put their trees out for garbage collection, and they grab them to bring to the party. They always win the unofficial "quantity" award. And in addition to bringing trees, all attendees bring a dish of some sort. This year I brought the following very simple to make Mango Pineapple Salsa with corn tortilla chips.
Ingredients:
- 1 cup chopped peel mango (I used two large mangos)
- 1 cup pineapple tidbits (I used two large cans of pineapple chunks and cut in quarters)
- 1/2 cup diced red pepper (I used one large pepper)
- 1 plum tomato, seeded and chopped (I used 2, and did not seed them)
- 3 tablespoons minced fresh cilantro
- 2 green onions, sliced (3 big ones in my case)
- 2 tablespoons lime juice
- 1 tablespoon lemon juice
- 1 jalapeno, finely chopped
- tortilla chips
Directions
In large bowl mix all ingredients except for chips. Cover and refrigerate for at least an hour. Serve with tortilla chips.
That's it! Easy to make, multi-colored, and tasty. And that's my recipe for this week!
As a bonus, here's a photo of our neighbor standing in front of the fire when our tree (the largest) was thrown in the fire. The fire gets big! And very warm/hot!
