BananaTUDES! Weekend Recipes, Italian Purse Appetizer

It's the weekend, a time when ActiveRainers share various recipes with the community, and with the BananaTUDES! group.

Last night we got together with a few friends for dinner and we brought an appetizer. The appetizer was called Italian Purse Appetizer (link to original recipe included). Photo below is what it was supposed to look like. Feature photo is what they looked like before being cooked. I was in a hurry and forgot the photo of what they looked like when done. They weren't as neat as below..

And the recipe is:

 

Ingredients:

- 1 sheet puff pastry, defrosted
- 9 teaspoons store bought pesto
- 9 tablespoons roasted red pepper, chopped
- 9 tablespoons cheese, shredded (havarti recommended)
- 1 egg
- 1 tablespoon cold water
- salt and pepper to taste

 

Directions

1. Preheat oven to 400º
2. Prepare cookie sheet with parchment paper
3. Once red pepper is chopped, place on paper towels to drain and pat dry.
4. Shred cheese and set aside.
5. Make egg wash, using egg and cold water - mix with fork and set aside.
6. Thaw puff pastry. When thawed, cut in three long strips
7. Cut each strip into 3 equal pieces, so you'll have 9 squares
8. On lightly floured surface roll one piece to 4"x4" square. I used my cutting board.
9. Place pesto in middle and spread leaving edges empty.
10. Add chopped roasted red pepper and cheese on top.
11. Brush edges with egg wash.
12. Pull all four corners together, twist dough and pinch sides together.
13. Brush outside with more egg wash and put on cookie sheet.
14. Sprinkle with salt and pepper.
15. Bake for 20 minutes and serve hot or at room temperature.

 

So how did they go over? Very well. This is what the serving plate looked like at the end of the evening:

Kat, these sound fantastic.

Puff pastry, pesto, roasted red pepper, and melted cheese is a combination that rarely disappoints. I love the simplicity of the ingredient list and how elegant they look once the corners are twisted together. Even if they were not perfectly neat, that usually just makes them feel more homemade and inviting.

And judging by that empty serving plate, the real review was clearly five stars. Recipes that disappear by the end of the evening are always the best ones to keep in rotation.

Sounds delicious. I would make the pesto from scratch, just a few seconds in blender, and eliminate the toxic additives in all processed food.

Love this one, Kat!!!!   I usually have puff pastry in the freezer. Used it this week for chicken pot pie and then chocolate croissants.   Did you roast the red peppers yourself? And, did you serve them with a dipping sauce??

It didn't need a dipping sauce, and no, I cheated and used jarred red peppers - I bet regular peppers roasted in the oven would be much better!

Hi Kat,
These sound delicious and, as others have said, relatively easy to make. It might be a fun cooking project to share with a guest sometime, which gives me a new idea. That would be to start a tradition of making something together that we've never made before, next time the kids come to visit.
