Irish Soda Bread is a quick bread that does not require yeast. All the leavening comes from baking soda and buttermilk.
Traditional Irish Soda Bread
Ingredients
- 4 cups King Arthur Unbleached All-Purpose Flour (has higher protein)
- 1 Tsp. Baking Soda
- 1 cup Buttermilk (adds moisture and tenderness)
- 1 Large egg
- 5 Tablespoons unsalted butter
- 3 Tablespoons sugar
- 1 Tsp. Kosher Salt
- One cup of fresh, soft raisins
- Preheat oven to 450 degrees
In one bowl whisk buttermilk and 1 egg. In a second bowl, whisk the flour, sugar, baking soda, and salt together.
Cut cold unsalted butter into the flour mixture. Coating the flour in cold butter guarantees a lovely flakey texture. Use what you are most comfortable with to mix with your hands or a fork.
Toss in raisins or you can use currants. I prefer raisins.
Bring the dough together with your hands. Score the dough into the shape of a cross - this allows the center to bake.
Baking depends on type of oven you have. Bake until gold brown.
I prefer to eat the Soda Bread without butter, but you can use what you like.
Irish saying: "Work is no disgrace; the disgrace is idleness" ties right back to earning your bread. Irish culture has always respected hard work as the way to put food on the table. Dignity comes from effort, not fancy titles.
