This Week…Nina Made Me Make This
A few weeks ago, Nina Hollander, Broker shared a recipe for Chocolate Tres Leche Cake that I had to try.

Tres Leches Cake is one dessert I’m not overly fond of; however, when I saw chocolate in the recipe, I had to try it.
I couldn’t wait for the family gathering at Easter to try this cake, so I had some of them over this week for fajitas.
You can use whatever meat you want for fajitas…chicken, pork, shrimp, or beef, however tihs IS TEXAS, so we had beef fajitas.

Fajitas
Skirt Steak- ½ to 1 lb (for 2 people)
Marinade:
-Juice from 2-3 limes
-Pineapple juice- about 6 oz.
-Garlic-minced
-Seasonings- you can buy Fajita seasoning or make your own using salt, pepper, cilantro, and cumin. You can add paprika and chili powder if you like.
Marinate the steak for 8-12 hours. The lime and pineapple juice help tenderize the meat.
Grill or cook in a hot cast-iron skillet 3-5 minutes a side.
Serve with flour tortillas, and whatever else you like, such as sour cream, melted or shredded cheese, guacamole, and sauteed onions and bell peppers.
