Here’s a simple, healthy chia seed pudding using frozen strawberries and honey—naturally sweet, high in fiber, and great for breakfast or a light dessert.
🍓 Strawberry Honey Chia Seed Pudding
Ingredients (2 servings)
- 2 cups frozen strawberries (slightly thawed)
- 2 tablespoons honey (adjust to taste)
- 1 ½ cups milk (dairy or unsweetened almond milk)
- 6 tablespoons chia seeds
- 1 teaspoon vanilla extract (optional)
- Pinch of salt
Instructions

Blend the strawberries
Add the slightly thawed strawberries, honey, and milk to a blender. Blend until smooth. -
Mix the pudding
Pour the strawberry mixture into a bowl or jar. Stir in chia seeds, vanilla extract, and a pinch of salt. -
Stir well (important!)
Let sit for 5 minutes, then stir again to prevent clumping. -
Chill
Cover and refrigerate for at least 2–4 hours, or overnight, until thickened. -
Serve
Stir before serving. Add toppings if desired.
Optional Toppings
- Fresh strawberries or blueberries
- Sliced bananas
- Granola
- Unsweetened coconut flakes
- Chopped nuts (almonds or walnuts)
Tips
- For a thicker pudding, add an extra tablespoon of chia seeds.
- For a smoother texture, blend the pudding after it sets.
- If your strawberries are very tart, add a little more honey.
This recipe keeps well in the refrigerator for up to 4 days, making it perfect for meal prep.
