Strawberry Honey Chia Seed Pudding

Here’s a simple, healthy chia seed pudding using frozen strawberries and honey—naturally sweet, high in fiber, and great for breakfast or a light dessert.


🍓 Strawberry Honey Chia Seed Pudding

Ingredients (2 servings)

  • 2 cups frozen strawberries (slightly thawed)
  • 2 tablespoons honey (adjust to taste)
  • 1 ½ cups milk (dairy or unsweetened almond milk)
  • 6 tablespoons chia seeds
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Blend the strawberries
    Add the slightly thawed strawberries, honey, and milk to a blender. Blend until smooth.
  2. Mix the pudding
    Pour the strawberry mixture into a bowl or jar. Stir in chia seeds, vanilla extract, and a pinch of salt.
  3. Stir well (important!)
    Let sit for 5 minutes, then stir again to prevent clumping.
  4. Chill
    Cover and refrigerate for at least 2–4 hours, or overnight, until thickened.
  5. Serve
    Stir before serving. Add toppings if desired.

Optional Toppings

  • Fresh strawberries or blueberries
  • Sliced bananas
  • Granola
  • Unsweetened coconut flakes
  • Chopped nuts (almonds or walnuts)

Tips

  • For a thicker pudding, add an extra tablespoon of chia seeds.
  • For a smoother texture, blend the pudding after it sets.
  • If your strawberries are very tart, add a little more honey.

This recipe keeps well in the refrigerator for up to 4 days, making it perfect for meal prep.

Good morning Roy. Like Nina, not much of a pudding guy but will admit you recipe sounds interesting. A friend of mine lives in South Carolina and was telling me that he and his wife were going to pick fresh strawberries. Enjoy the pudding on a reading break.

That sounds delicious, but I would likely replace the strawberries with blackberries or blueberries, haha.
