It's the weekend, a time when ActiveRainers share various recipes with the community, and with the BananaTUDES! group.
So here is a recipe you can make when time is limited. You can also switch up ingredients and use whatever you happen to have at home. So it's easy to make, you can use up ingredients, and it's quick to get on the table. What could be better?
Pesto Corn Flatbread
Ingredients
- 2 ears corn, shucked (I used 2 cups frozen corn and cook in butter with some salt until corn is lightly browned)
- 1/4 cup extra virgin olive oil
- 2 flatbread or naan
- 1 cup pesto
- 8 oz burrata or mozzarella
- 2 heirloom tomatoes, thinly sliced
- 1 small red onion, thinly sliced
- Salt
Directions
1. Preheat oven to 400º.
2. Cook corn in butter until lightly brown.
3. Cook flatbreads 2 minutes per side until lightly browned.
4. Spread pesto on one side of flatbreads.
5. Cover with mozzarella, corn, tomatoes and onion.
6. Bake 10-12 minutes until edges are golden brown and cheese is melted.
7. Season with salt and eat.
Alternatives
- You can use any kind of cheese
- Use sundried tomatoes instead of regular tomatoes
- Feel free to add meat of any kind
Why is this so good? Because you can put any ingredients on top, cook for 10 minutes, and you are ready to eat. This works any day of the week!
