That Little Blue Elephant Gets Around

The Little Blue Elephant used to be a restaurant downtown just a half block from my office. They did a good business here but they purchased a food truck at the urging of several Event Directors and found they made more money on the road and enjoyed it more than a stationery post as well.

The owner of The Little Blue Elephant told me that he also liked being his own landlord and being able to take his business South during our harsh winters.

While I know my daughter Tina liked eating at The Little Blue Elephant when it was downtown here I must be honest in my reporting... being a man of German decent, I am a meat and potatoes man and I rarely try any ethnic foods, including Thai food.

Do you enjoy the cartoons written by my son (Timmothy N. Timm) which I use as a springboard to write my daily posts? His strip, Titus & Philemon, has run in two newspapers for years as well as being printed in my blog every day. Titus & Philemon (pronounced Phi - Lee -Man) are guinea pigs. Their owner is Joe. Timmothy has never repeated a joke/comic strip in the 12 years he has been writing it. He has never copied another strip, such as Peanuts or Garfield. Bob, this is a great example of how small businesses continue to adapt and find creative ways to grow. Moving from a storefront to a food truck model gives owners flexibility, lower overhead, and the ability to follow seasonal demand. I also enjoyed the personal touch about your daughter liking the restaurant while you stayed loyal to meat and potatoes. Stories like this show how local businesses evolve while still keeping the community connection that made people enjoy them in the first place.

I think that I have only had Thai food once, but I enjoyed it, so I am not sure why I haven't had it again, haha.

Hi Bob,
One of my favorite things about traveling is trying the different foods. I love Thai food and could easily consider it a major food group. My friend, Aura, has moved to Thailand and has invited me to visit. I'm looking forward to that.

Good morning, Bob... I'm not a fan of Thai food, either. Or Japanese or Korean food. I do love Chinese food, especially Hunan and Szechuan... the spicier the better for me.

So, IMHO I think the future of restaurants is the humble food truck. Why would you pay all that $$$ for brick and mortar, just to have trouble finding employees. You can run a food truck with two or three people.
