Lately, I’ve been revisiting recipes that we used to make. The Sock It To Me cake was popular in the early 70s and a go-to dessert for me.
If you remember Rowan & Martin’s Laugh-In, then you’re familiar with the phrase “sock it to me.” The cake, introduced by Duncan Hines, used their Classic Butter Cake Mix. Perfect way to sell your produce!!!
Sock-It-To-Me Cake
1 pkg Duncan Hines Butter Recipe Golden Cake mix
1 c. (8 oz) dairy sour cream
½ c. Crisco Oil
¼ c sugar
¼ c. water
4 eggs
Filling: 1 c. chopped pecans
2 T. brown sugar
2 tsp. cinnamon
Preheat oven to 375 degrees. In a large bowl, blend cake mix, sour cream, oil, ¼ c. sugar, water and eggs. Beat at high speed for 2 minutes. Pour 2/3 of the batter in a greased and floured 10-inch tube or bundt pan. Combine filling ingredients and sprinkle over the batter in pan. Spread the remaining batter evenly over the filling mixture. Bake at 375 for 45-55 minutes, until the cake springs back when touched lightly. Cool right side up for about 25 minutes; then remove from pan.
GLAZE: Blend 1 c. confectioners' sugar and 2T. milk. Drizzle over the cake. **A little liquid goes a long way, so if you want to make more of the glaze, add the milk a little at a time.
