This Week…So Easy Jeffrey Dimuria Could Make This!

 

This dish is easy, and you can make it with whatever you like.


All you need is the ability to boil water. If you can use a knife without cutting yourself…all the better. If not, you can buy pre-cut veggies. 


Cold Tortellini Salad

 

1 package Tortellini

1 Bottle of Caesar Dressing (Don’t use the creamy kind)

Diced celery (as much or as little as you like)

Cherry tomatoes -halved (or use sun-dried tomatoes packed in oil)

Chopped parsley or cilantro

Chopped Bell Pepper (optional)

Chopped Cucumbers (optional) 

Olives (green or black) halved (optional)

Onion (I use a red one)- chopped (optional)

Salt & Pepper to taste

Lime juice

Grated Parmesan Cheese

Prep…

Chop and cut what you want to put into the salad

Prepare the tortellini according to package directions. 

After you prepare the tortellini, while it is still warm, add the ingredients and Caesar Dressing. Mix well and refrigerate. 

 Before serving, check to see if you need more dressing.

Kathy, now this is my kind of recipe—simple, fresh, and hard to mess up. Tortellini salad is one of those dishes that somehow tastes even better after it sits awhile in the fridge. I also love recipes like this where you can clean out the veggie drawer and make it your own. Jeffrey may have been called out publicly…now we need proof he actually made it!
