This is another simple recipe, with many different options in terms of how to make it. It all depends on what you like!
CIabatta French Toast
Ingredients:
Sliced Bread
Eggs
Milk and/or cream
Vanilla
Cinnamon
Butter
Syrup
Directions:
The ingredients are listed without specific measurements on purpose. The best french toast will be the way you like it and we're all different! Read on!
1. Regarding the bread, I used homemade ciabatta bread and I cut fairly thick pieces. You may use any kind of Italian bread, and if you prefer you can use any other type of bread that you enjoy. Just make sure the slices are not skinny.
2. In a large wide bowl, beat your eggs. Typically, 2 eggs should be plenty for 4 to 6 slices of French Toast but add as many as you want!
3. Add milk and/or cream to eggs and mix well. You want the liquid to still be yellow, but be plenty in terms of volume for however much bread you are using.
4. Add a healthy splash of vanilla. If I had to guess on the amount, I'd say 2 teaspoons. Don't be shy.
5. Dump a nice amount of cinnamon in. You want all the pieces of toast to have cinnamon.
6. Mix well. Add a few tablespoons of butter to your griddle, and once it's melted, dip one side of a piece of bread into the egg concoction, let excess drip off, and then dip the other side in. Place on griddle. Continue until all slices are on the pan.
7. You may wish to add cinnamon to the top of some of the pieces if there isn't enough for your taste. Let cook until bottom is lightly browned, then flip over. Do the same for the other side.
8. Place on plates and butter and use syrup as desired.
A few extra comments:
Please don't use syrups with any kind of additives. Plain organic maple syrup with no additives is worth the extra cost. It truly makes a huge difference.
Also, even if you use margarine regularly, try to use regular butter on your french toast. The richness is worth it.
I personally do not like "wet" french toast so I don't soak the bread. I know, I know, most recipes want you to soak it. Soggy bread would not work in this house!
And there you have it! A little different than the normal dinner recipes, but since I just finished eating this, I thought it would be a good one!
