BananaTUDES! Weekend Recipes: Penne(Pasta) ala Vodka

It's the weekend, a time when ActiveRainers share various recipes with the community, and with the BananaTUDES! group. 

This one is a pasta dish with flavor! We made it on Friday night after a very busy day with Habitat, meeting with wood supplier, stop at seafood place, meeting with HVAC dude, walking dog, moving plants inside and watering plants outside. This was a quick dinner to make, and a great one to pause and chat over....

 

Penne (or Pasta) ala Vodka

Ingredients:

Salt
1 pound Rigatoni/Penne or your favorite pasta
2 Tablespoons olive oil
4 ounces diced pancetta
1 medium yellow onion, finely chopped (* I used sweet onion)
2 garlic cloves, finely chopped
1/2 teaspoon red pepper flakes
3/4 cup vodka
1 28 oz can crushed tomatoes
Black pepper
3/4 cup heavy cream
1/4 cup grated Parmesan/Romano cheese
1 tablespoon roughly chopped fresh oregano
2 tablespoons roughly chopped Italian parsley

 

Directions

1. Bring large pot of salted water to boil, add pasta and cooking according to instructions until al dente.
2. Meanwhile, heat oil in deep 12" skillet or pot over medium heat. Add pancetta and fry until crispy about 3-5 minutes. Add onion, garlic and red-pepper flakes and cook until onion is translucent for about 3 minutes. Turn heat lower and add vodka and cook until reduced by half - about 2-3 minutes.
3. Add tomatoes and 1/2 can of water.  simmer until it thickens, about 10 minutes. Add salt and pepper to taste.  Add cream and cook until sauce becomes pinkish, about 1 minute.
4. Add cooked pasta and 1/4 cup cheese. Season with salt and pepper. Put in bowls and add oregano and parsley if desired.

I served with homemade ciabatta bread and grated fresh Romano cheese. And with red wine. It was delicious and was devoured quickly.

TRYING, but got another final draft of the agreement at 6 pm yesterday, and my attorney was already gone.   They have some strange wording about deposit/cautions in the agreement that makes it sound like I have to pay it twice.

Hi Kat- Penne ala Vodka is one our favorite dishes.   We had it as an appetizer years ago in Boca Raton and fell in love with it. I started using tomato paste with it instead of the crushed tomatoes (read it in a comment on a recipe site)

I'll have to have Larry make homemade bread next time!!!

Kat Palmiotti - Coincidently, I made Penne ala Vodka last night for dinner. It's one of my favorites! However, I couldn't wait to eat, so I used Rao's Vodka Marinara Sauce from the jar! It's such a great comfort food!
