Some recipes look like you spent hours in the kitchen...when in reality, they come together in minutes. This Baked Brie with Honey & Blueberries is one of those magical appetizers.

As the brie bakes, it transforms into a warm, creamy center wrapped in a soft rind. Sweet honey caramelizes slightly while the blueberries become juicy and burst with flavor. The result is the perfect balance of creamy, sweet and fruity in every bite.

For a festive Fourth of July celebration, I love surrounding the finished brie with fresh strawberries, blueberries and an assortment of crackers or toasted baguette slices. It's simple, beautiful and always the first appetizer to disappear!


Baked Brie with Honey & Blueberries

Ingredients

  • 1 (3.4-ounce) wheel of Brie (or up to an 8-ounce wheel)
  • ¼ cup honey
  • ½ cup fresh blueberries
  • Fresh strawberries, halved (for garnish)
  • Crackers, toasted baguette slices or crostini for serving
  • Fresh mint (optional garnish)

Instructions

  1. Preheat oven to 350°F.
  2. Place the brie in a small oven-safe baking dish or on a parchment-lined baking sheet.
  3. Pour the honey evenly over the top of the brie.
  4. Scatter the blueberries over and around the cheese.
  5. Bake for 12-15 minutes for a small wheel (or 15-20 minutes for a larger wheel), just until the brie feels soft to the touch but hasn't completely burst open.
  6. Carefully transfer to a serving platter.
  7. Garnish with fresh strawberries around the brie and sprinkle on a few extra blueberries. Add fresh mint or thyme if desired for a beautiful finishing touch.
  8. Serve immediately with crackers, sliced baguette or crostini while the cheese is warm and delicious.

Tips

  • For even more flavor, sprinkle a handful of chopped pecans or walnuts over the honey before baking.
  • A light sprinkle of flaky sea salt just before serving makes the sweet honey pop.
  • Leftovers (if you're lucky enough to have any!) are amazing spread on toasted sourdough the next morning.

I especially love this recipe because it checks every box: five minutes of prep, minimal ingredients, beautiful presentation and maximum "wow" factor. Guests always assume it's much more complicated than it is, and the patriotic strawberries and blueberries make it a natural centerpiece for a Fourth of July appetizer board. 🇺🇸🍓🫐

Oh yummy. I have a dinner planned for later this week which is many of the same ingredients but on flatbread (it's brie, apples, honey, etc). If it comes out good, I'll write about it next weekend!

Good morning, Debe... this is certainly a festive looking dish. I love it. It made me think about whether I ever saw a baked brie dish when I lived in France... and the answer is I didn't. The French don't bake brie all that often and I wonder where we Americans picked up the idea to do so and to serve it as an appetizer. I never saw cheese as an appetizer in France... it was a dish served with salad before dessert.

Oh dear lord. I want to take this and inject it into my veins! I love melted brie so much. My girlfriend likes me to make it like we had it in a restaurant once: dip the whole wheel in egg wash, and then plain breadcrumbs. Pan-fry, and bake until the cheese starts to ooze out. I cover mine with a glaze of seedless raspberry preserves- but I think the blueberries look better. Man, I am hungry!!
