It's the weekend, a time when ActiveRainers share various recipes with the community, and with the BananaTUDES! group.
I have a greenhouse, and I planted a few zucchini plants in there. About a month ago I was excited to see my first zucchini. Since then, we've made zucchini paninis, zucchini fries, zucchini side dishes and more. We're getting into the "b" list of zucchini options, so this past week, I made Zucchini Fritters. These can be made as small patties for a side dish or appetizer, but I chose to make big ones for a main course. So here's the recipe and the way I served them.
Ingredients:
2 small zucchini
2 teaspoons salt
4 minced scallions
1/4 cup chopped parsley
1/4 cup chopped dill
1 beaten egg
3/4 cup grated Parmesan
1/4 cup flour
olive oil
Directions:
1. Grate zucchini into colander in sink, toss with salt and let sit 10 minutes. Squeeze out liquid.
2. Mix zucchini with scallions, parsley, dill, egg, Parmesan and flour.
3. Pan-fry spoonfuls of mixture in olive oil, flattening with spatula, 3-4 minutes per side.*
4. Drain on paper towels and then enjoy.
* I divided the zucchini mixture into two parts and made two huge patties. I served them on toasted hamburger buns with a mayo/dijon/dill sauce. Served with a vegetable side, and yummo!
