One Pan Bourbon & Bacon Braised Chicken Thighs

Ingredients:

1 1/2 pounds boneless chicken thighs          8 slices bacon, diced

1 can French Onion Soup                                 1/4 cup bourbon

2 tbsp Dark brown sugar                                 2 1/2 cups water

8 oz uncooked medium egg noodles          2 tbsp Chop fresh parsley

Season the chicken as desired.  Cook the bacon in a 12 inch skillet over medium heat for 5 mins.  Remove the bacon from the skillet.  Pour off all but 2 tbsp of drippings.

Increase the heat to medium-high.  Add the chicken to the drippings in the skillet and cook for 6 mins or until brown on both sides.  Remove from skillet.

Add the bourbon and cook for 1 min.  Stir in soup, brown sugar and water and heat to boil.  Stir in noodles and half the bacon.  Return to the skillet.

Reduce the heat to medium.  Cook for 10 min. and cooked until the noodles are tender.  Sprinkle with the remaining bacon and the parsely.

I just forwarded this to my son, who has taken over as the chef in our house.  Maybe it'll show up on our dinner table soon.

Good morning Will. Our paths cross again here in the Rain. Not often enough lately. You had me at thighs, really fond of them. And who doses not like bacon? Thanks! Enjoy your day.

Will, this looks like the perfect comfort food for a Sunday evening. Adding bourbon to the braise is a great touch—I'll definitely be saving this recipe to try out at home. Thanks for sharing!

HI Will... this looks good. However, I don't care for bacon... do you think it would taste okay without it since bacon is in the name of the recipe?
