This Week…Who Needs Lettuce!?

 

Anyone still eating their salads???  I’m just kidding!  I don’t scare easily, so we have salads every night. That said, I continue to do as I’ve always done…soak greens, etc., in vinegar and water and triple wash them.

 

But, you don’t need greens or lettuce to have a salad. This is one of my favorite summer salads to make. You can put your own touch to it. If Feta isn’t your cup of tea, you could us any other cheese. 

 

Jeffrey DiMuria 321.223.6253 Waves Realty, here’s a vegetarian recipe for you!  And, it goes well when stuffed in a Pita Pocket.





Tomato, Cucumber and Onion Salad with Feta Vinaigrette

 

Ingredients:

4 beefsteak or assorted heirloom tomatoes, thinly sliced

2 cucumbers, peeled, halved lengthwise, seeded and thinly sliced

½ large red onion, sliced paper-thin

Freshly ground black pepper to taste

 

Feta Vinaigrette

1 cup olive oil

2 Tbls dried oregano

1 Tbls finely minced garlic

½ cup crumbled feta cheese

¼ cup red wine vinegar 

 

Place the vinaigrette ingredients in a blender or food processor and blend. Adjust seasonings to your taste. 

Arrange the salad ingredients on a platter and season with salt and pepper. Spoon the vinaigrette over the salad. 

Enjoy!!!

Kathy, OH YUM.   I make a version of this, only a bit more simple.  Onions, tomato, oregano flakes, olive oil and balsamic.    I did hear about the lettuce scare, and see many funnies on FB about changing eating habits.

Good morning Kathy. We do consume a version of this salad on a regular basis even before the lettuce scare. That said, for cautionary reasons lettuce is off the grocery list for now and is missed. Better safe than sorry. Enjoy your day.

Wayne Martin I only buy heads of romaine and remove the outer leaves. I soak it in vinegar and water, rinse it, then spin it. I'm not scared, just cautious.

Good morning, Kathy... I too continue to eat lettuce. I always buy hothouse lettuce that is already triple washed and wash it again when I make a salad. So far so good... and I don't expect that to change. As for that recipe... it's one I'd have to pass on... I don't eat feta cheese or raw onions (raw onions give me a migraine type headache). Sorry about that.

Nice. That looks like I could almost make it. I have been eating lettuce, but I NEVER buy pre-washed anything (they use chlorine in the wash). I wash it myself. Avocado is really high in protein and well priced right now. With that dressing it would be yum on a sandwich  :)

Wow..this looks do yummy! Really a great blend of flavors and I like feta and Bermuda onions so often make a similar salad. I always have to add avocado!

Kathy Streib - as long as I've been shopping for groceries, I've always practiced good hygiene for myself, my home, and groceries, like lettuce too! I buy mine from the Farmer's Market where I know the owners and their help, and I still know the proper way to wash lettuce and produce. I use a lettuce spinner too and eat mostly salads. As you say, a salad doesn't have to include lettuce.

Yes indeed, I am still eating salads. I bought more lettuce yesterday. 

I wash all of my fruit and veggies in food-grade (35%) hydrogen peroxide ... appropriately diluted! Kathy Streib 

I've made something similar to this recipe, and it is tasty - especially good in the summer!

I was unaware of the produce scare until after stocking up on my bi-weekly grocery haul.  I bought leafy greens, cucumbers, strawberries and who knows what, only to learn the following day from my granddaughter about the parasitic contamination. Scared to eat what I purchased, the stuff is sitting in the fridge rotting away.
