This Week…Make Ahead Appetizer!
Sometimes all we want to eat are appetizers. You can get a chicken or salad anywhere, but appetizers have always seemed special.

These Spinach-Artichoke Puff Pastry appetizers are delicious and can be made and frozen ahead of time.
If you’ve never worked with Puff Pastry, don’t worry. It’s easy!
Spinach-Artichokes in Puff Pastry
1 (10 oz) pkg frozen chopped spinach, thawed
1 (14oz) can artichoke hearts, drained and chopped
½ c. mayo
½ c. grated parmesan cheese
1 tsp onion powder
1 tsp. garlic powder
½ tsp pepper
1 (17.3oz) pkg frozen puff pastry.

Drain spinach well, pressing between layers of paper towels.
Stir together the spinach, artichoke hearts, and the next 5 ingredients.
Thaw puff pastry at room temperature 30 minutes. Unfold pastry, and place on a lightly floured surface or heavy-duty plastic wrap.
Spread half spinach mixture evenly over the pastry sheet, leaving a ½ inch border. Roll up pastry, jellyroll fashion, pressing to seal seam; wrap in heavy-duty plastic wrap.
Repeat the procedure with the remaining pastry and spinach mixture. Freeze for 30 minutes; then cut into ½-inch thick slices. (A serrated knife works best!)
You can freeze the unbaked log or slice it into pinwheels for up to 3-5 months. Wrap them tightly in plastic wrap, then thaw slightly before baking.
Bake at 400 degrees for 20 minutes or until golden brown.
