Redux Pizza Crust: Barbara & Roger Style
We have become more diligent in our household to find healthy, tasty alternatives to some foods that we enjoy, pizza is one of them. Years ago, Barbara & Roger, our friends and fellow members, posted a healthy crust sans flour.

I followed the instructions of mixing 8 ounces of fat-free cream cheese, 8 ounces of low fat grated Parmesan cheese with 2 eggs, spread it on parchment paper and put it in the oven for 20 minutes on 350 degrees. When I pulled the crust out, it was golden brown and looked delicious!

I loaded it up with some of our favorite, garden vegetables including spinach, green peppers, basil, red onion, mushrooms and sliced tomatoes plus a drizzle of garlic olive oil. Topped it with low-fat mozzarella cheese and put it in the oven at 400 degrees for another 20 minutes.

Wallah! This was the tastiest pizza we have ever had! No need to add anything once the pizza was done, just slice and eat. And we did! Thanks to Barbara Todaro & Roger Mucci for showing theirs, it spurned me to show mine too!
Besides, Mikey likes it, he really, really likes it!
