🍓 RECIPE: Strawberry Cheesecake Crunch Cups
The No-Bake Treat Everyone Will Want the Recipe For!Some recipes catch my eye because they’re beautiful. Others because they’re easy. And every once in a while, you find one that checks ALL the boxes—which is exactly what happened with these Strawberry Cheesecake Crunch Cups!
Fresh strawberries, creamy no-bake cheesecake and a sweet, buttery strawberry crunch made with Golden Oreos and freeze-dried strawberries…what’s not to love?
And as much as I love my oven, perhaps the best part of this recipe—no oven required!
These pretty individual desserts are perfect for summer entertaining, family get-togethers, showers, book club or those occasions when you’ve volunteered to bring dessert and suddenly realize you need something that looks like you worked MUCH harder than you actually did.
🍓 The Crunch Is the Secret!
And it could not be easier. Simply combine crushed Golden Oreos, crushed freeze-dried strawberries and melted butter to make one delicious strawberry crunch mixture. Then layer your cups:
- Strawberry Crunch
- Creamy Cheesecake Filling
- Fresh Diced Strawberries
Repeat those luscious layers and finish with another generous sprinkle of strawberry crunch on top.
That’s it! Easy-peasy—simple ingredients, gorgeous layers and individual servings that look quite impressive.
đź’ˇ KITCHEN TIPS
Tip #1: Make these the night before whenever possible. The flavors have time to come together, the cheesecake filling sets beautifully and dessert is already DONE before your guests arrive. Now THAT is my kind of entertaining!
Tip #2: About those Freeze-Dried StrawberriesIf you’re wondering, “Freeze-dried strawberries? Where in the world do I find those?”—you’re not alone! I had the same question but, easily found them on Amazon. Here’s the link to the ones I use.
To be clear, these are simply real strawberries with the moisture removed, which makes them light, dry and crispy with a delightfully concentrated strawberry flavor. They crush beautifully and give our topping that gorgeous color and strawberry crunch.
Don’t want to wait for the Amazon order to arrive, look for them in the dried-fruit or snack aisle, often near nuts and trail mix, at your local grocer. I do use the ones with no sugar added because strawberries are sweet enough on their own and with my sweet tooth, I don’t need the additional sugar anyway!
One important note: Do not substitute regular dried strawberries. Those are soft and chewy and won’t give you the crispy crunch you’re looking for.
ENJOY!!
Fresh + Creamy. No-Bake + Easy. Perfect Make-Ahead Treat.
