This Week…Comfort Food For My Neighbor
These past few weeks, I’ve been taking a meal or muffins to our neighbor who is ill. I know his wife, Pat, is a great cook, but she’s tired and has more on her mind than what’s for dinner.

While searching for an easy casserole (because they’re easier to share), I found one I hadn't made in many years. Grandma’s Hamburger Casserole is one I’m sure has passed through many families in as many different forms.
As with most savory dishes, nothing is set in stone. You can substitute ground turkey or tofu if you want. Make it to suit your tastes.

Grandma’s Hamburger Casserole
INGREDIENTS**
1 pound ground beef
2 (15 oz) cans tomato sauce
1 tsp white sugar
1 tsp salt
1 (8oz) package egg noodles
1 cup sour cream
3 oz. cream cheese, softened
1 large white onion, finely died
½ cup shredded sharp Cheddar cheese
**As with most savory dishes, the exact amounts are up to you and your preferences.
DIRECTIONS
Preheat the oven to 350 degrees. Greats a 9x13 casserole dish.
Bring a large pot of lighty salted water to boil. Cook the egg noodles about 7-9 minutes. Then drain.
While the water and noodles are boiling, prepare the hamburger mixture:
In a heated skillet, cook and stir ground beef until browned and crumbly (5-7 minutes) Drain and discard the grease.
Mix the tomato sauce, sugar, garlic salt, onion, and
salt into the beef. Simmer until the flavors are blended. (about 20 minutes.)
Cover the skillet and set aside.
Mix the sour cream and cream cheese together in a bowl.
Layer ½ the noodles into the prepared casserole dish, then top with ½ of the sour cream mixture, then ½ of the ground beef mixture. Repeat this layering once more, then top with the shredded cheese.
Bake in the 350 oven for 25 to 30 minutes.

All you need is a salad!
